2 eggs
1 (10 ounce) can evaporated milk
2 cups all-purpose flour
2 teaspoons baking powder
1 1/2-2 teaspoons salt
1/2-1 teaspoon black pepper
1 1/2-2 teaspoons garlic powder
1 1/2-2 teaspoons onion powder
1/2 teaspoon Accent seasoning
2 lbs medium raw shrimp, peeled, deveined, and chopped in chunks
1 (10 ounce) package frozen mixed vegetables, completely thawed, and drained
4 cups vegetable oil, for deep frying

Steps:

  • In a mixing bowl, beat the eggs with the evaporated milk.
  • Add the flour, baking powder, and the seasonings. Mix until smooth.
  • Add the shrimp and mixed vegetables, combining well.
  • Heat oil in a 12-inch skillet to medium heat.
  • Drop batter by tablespoonfuls and fry until golden brown.
  • I usually fry 1 or 2 patties and taste them to make sure seasoning is just right. Adjust seasoning if needed.
  • Using a bamboo skewer, pierce the center of patty to make sure that skewer comes out clean. A little bit of dough will be on the skewer but as long as it's not runny and still wet looking, it should be done.
  • Drain on paper towels.

1/2 cup mayonnaise
1/4 cup chopped fresh cilantro
1 lb cooked shelled shrimp, chopped coursley
2 tablespoons fresh lime juice
1/2 lb skinless red snapper
2 cups shredded mild cheddar cheese
1 1/2 cups dried breadcrumbs
2 eggs
3 tablespoons vegetable oil

Steps:

  • Combine mayonnaise, cilantro and lime juice and set aside.
  • Coarsely chop red snapper in a food processor, add Shrimp 3/4 cup bread crumbs, 1 1/2 cups cheese and 3 tbsp of mayonnaise mix, process untill combined Coat patties in rest of bread crumbs and cook in veg oil 3 minutes for each side or untill done.
  • serve with remaining mayonnaise mixture.

1 can(s) 10 ounce can of evaporated milk
2 c all purpose flour
2 tsp baking powder
1 1/2 tsp (or 2 teaspoons) salt
1 tsp black pepper
2 tsp garlic powder
2 lb medium raw shrimp, peeled, deveined, and chopped
1 10 ounce package of frozen mixed vegetables (completely thawed and drained)
4 c vegetable oil (for deep frying)
2 c shredded crab meat (optional)

Steps:

  • 1. combine eggs and evaporated milk in a bowl and beat together.
  • 2. Add in flour, baking powder, salt, pepper, garlic powder, and other seasoning and mix.
  • 3. Add in shrimp. crab meat (if you're using it), and mixed vegetables and combine.
  • 4. Heat oil in a skillet on medium-high
  • 5. When the oil is heated, drop large spoonfuls of the batter into the oil and fry until golden. Use a bamboo skewer and poke it through the patty to make sure it's done. If the skewer comes out clean, then it's just right.
  • 6. Drain oil over paper towels and serve.

2 lb uncooked shrimp, peeled and deveined
3/4 pkg frozen corn
1 1/2 pkg frozen peas and carrots
1/2 c diced bell peppers
1/4 c diced onions
3 clove garlic, minced
1 can(s) carnation milk
3 eggs
1/2 c beer, not lite
2 1/4 c all purpose flour, to right consistency
1 1/2 Tbsp baking powder
salt and pepper, to taste
cooking oil

Steps:

  • 1. Preheat cooking oil in pan on medium high heat. Peel and devein shrimp then mince or chop into pieces; place into a bowl and add onions, garlic, salt and pepper to taste.
  • 2. Place frozen corn, peas and carrots in a strainer and rinse off with water; drain and set aside (should not be frozen when placed into bowl). Dice bell peppers and put it into the bowl of shrimp; add thawed vegetables and mix altogether.
  • 3. Add carnation milk, eggs and beer into bowl mixture. Mix all ingredients and then add baking powder and gradually add your flour. The consistency should be somewhat thick. Add salt and pepper if needed.
  • 4. Once oil is preheated, turn to medium heat(so patties will not burn). Using two tablespoons, carefully drop a spoonful into heated oil to test consistency. Shrimp patties should be done when golden brown and cooked inside. Set on paper towel to drain and continue cooking with heat inside.
