OLD BAY® SHRIMP AND PASTA ALFREDO

Old Bay® Shrimp and Pasta Alfredo image

This recipe came from my Italian family. It is not only delicious but so quick and easy. Measurements really aren't necessary--make it your own. You can't go wrong with too much seasoning or too little. Go easy on the lemon is my only recommendation. Unless you love lemon! Adding Parmesan cheese is really delish and the Alfredo sauce gives it a nice hot and creamy texture.

This recipe is not for those who are looking for low calories or fat. Go easy on the salt because Parmesan is naturally a salty cheese. I hope you enjoy making it as much as I did.

INSTANT POT CREAMY SHRIMP ALFREDO PASTA

Instant Pot Creamy Shrimp Alfredo Pasta image

Number Of Ingredients 13

3/4 lb fettuccine or penne pasta
3 cups water
1 lb shrimp, peeled and deveined
1 Tbsp olive oil
1 small onion, finely chopped
2 Tbsp butter
1 garlic clove
1/3 cup chicken broth
2 cups heavy whipping cream
1/2 cup parmesan cheese
Salt and pepper to taste
Sprinkle of paprika
Parsley or basil for garnish (optional)

Steps:

  • Place noodles and water in the Instant Pot. Mix so the noodles are covered. (I broke my noodles in half)
  • Close the lid, turn the valve to sealing, and push the "Manual" or "Pressure Cook" button. Set it to cook for 4 minutes.
  • After the noodles are done cooking, remove them from the pot and set to the side.
  • Press the "Saute" button on the Instant Pot. After it says "hot" add 1 Tablespoon of olive oil. Season the shrimp with salt, pepper, and paprika. Add shrimp and cook for 1 -2 minutes on each side. You'll know they are done when they are no longer translucent. The insides will be white and the outsides will be a golden/pink color. Remove the shrimp from the Instant Pot and set aside.
  • Next, add butter, onion, and garlic and saute until the onion is golden brown. Add chicken broth and scrape the bottom of the pot to deglaze.
  • Add cream and simmer for 2 minutes. Add parmesan and stir until creamy and smooth. Press the "Cancel/Keep warm" button. Add paprika, salt, and pepper to taste. Stir in the shrimp and pasta.

Tips:

  • Use fresh shrimp. Fresh shrimp will have a sweeter, more delicate flavor than frozen shrimp. If you must use frozen shrimp, thaw them in the refrigerator overnight before cooking.
  • Cook the shrimp properly. Shrimp should be cooked until they are opaque and pink. Do not overcook them, as this will make them tough and rubbery.
  • Use a good quality Alfredo sauce. There are many different brands of Alfredo sauce available, so choose one that you like the taste of. You can also make your own Alfredo sauce from scratch.
  • Add your favorite vegetables. This recipe calls for broccoli and sun-dried tomatoes, but you can add any vegetables that you like. Some other good options include mushrooms, zucchini, and bell peppers.
  • Garnish with fresh herbs. Fresh herbs, such as parsley or basil, will add a pop of color and flavor to your dish.

Conclusion:

Shrimp pasta Alfredo is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover shrimp. With a few simple ingredients and a little bit of time, you can create a meal that your whole family will love.
