ROASTED SHRIMP AND TOMATOES WITH ROASTED GARLIC PARMESAN #RAGU
Ragú® Recipe Contest Entry. Roasting the shrimp so that they're slightly caramelized really brings out their sweetness and rich flavor. Steps:
- Preheat oven to 425°F Cut 1 head cauliflower into florets and spread in one layer on a large rimmed baking sheet. Drizzle with 2 TBSPs of olive oil and season with salt and pepper. Roast for 20-25 minutes, or until cauliflower is tender and golden brown.
- Transfer cauliflower to food processor and add butter. Process, scraping sides of processor as needed, until cauliflower has the texture of smooth grits or polenta. Add about ½ jar of the Ragu Roasted Garlic Parmesan Sauce and pulse to combine. Add additional salt and pepper to taste. Set aside.
- While the cauliflower is roasting, make the polenta. Bring the water to a boil in a medium saucepan over medium high heat. Add the butter. While whisking gently, pour the polenta into the boiling water in a steady stream. Turn down the heat to low and continue whisking until the polenta has thickened enough that it doesn't settle back on the bottom of the pan when you stop stirring. Add additional water if polenta gets too thick. Cook polenta for 5-7 minutes over medium heat, stirring occasionally, making sure polenta doesn't get too thick, adding small amounts of water, if necessary.
- Add the remaining Ragu Roasted Garlic Parmesan Sauce and the prepared cauliflower to the cooked polenta and stir well. Cover and keep warm.
- Next, roast the shrimp and tomatoes. Spread the shrimp on a rimmed baking sheet. Add the tomatoes and the garlic to the baking sheet and drizzle 2 TBSPs of olive oil over all. Season with salt and pepper and toss so that the shrimp and tomatoes are coated with the oil and garlic. Roast at 425 degrees F for 7-8 minutes, or until shrimp is cooked through and tomatoes are bursting and starting to char. Remove the shrimp and tomatoes from the oven and add the arugula to the pan. Using tongs, toss the arugula with the hot shrimp and tomatoes so that it wilts slightly.
- To serve, spoon some polenta onto a plate or into a shallow bowl. Top with the shrimp and tomato mixture. Sprinkle with pine nuts and serve.
KITTENCAL'S BAKED JUMBO LEMON-GARLIC PARMESAN SHRIMP
You won't find this recipe anywhere else, I developed this using jumbo shrimp and I would strongly advise to use only very large or jumbo for this and leave the tails intact, depending on the size and amount of the shrimp used a small amount of breadcrumb mixture might be left over --- I have listed the cayenne pepper as only optional you may adjust amount to suit heat level or omit, I like to add it in for some heat :)

Steps:
- 1. In a medium saucepan over medium heat, bring 1 3/4 cup chicken broth to a boil, whisk in grits and reduce heat to simmer. Cook and stir grits for 10 minutes or until thicken and creamy. If need to, add more broth to finish cooking. Remove from burner, add salt, pepper and stir in cheese and butter - until melted. Cover and keep warm, while preparing shrimp.
- 2. Add one tablespoon oil to a medium skillet, over medium heat. Cook bacon until crisp, or if using Canadian bacon, just brown. Remove from skillet. Over medium high heat, add seasoned shrimp to skillet and cook, until bright pink - about 2 minutes, turning once. Remove from heat and reduce heat. Stir in garlic, green onion, stirring so not to burn, once tender and golden, increase heat and add broth and reduce by half. Stir in butter, parsley, lemon juice and hot sauce. Return shrimp to sauce and cook just one minute longer.
- 3. Divide grits into serving dishes and equally divide shrimp and sauce over top. Enjoy!

- 1. In a large pot cook the pasta in boiling water according to package directions. Drain and set aside
- 2. Using a large sauce pan, heat olive oil and 2 Tablespoons of butter. Add the garlic and red pepper flakes and cook until fragrant.
- 3. Add the shrimp and salt & pepper to taste. Cook until the shrimp starts to turn pink. Add Italian seasoning.. The recipe suggests adding the spinach and cook until wilted. I added the spinach with the next step and found the spinach did not get quite so wilted. Preferred doing it this way.
- 4. Add the pasta back to the pot while still warm with the remaining butter, parmesan and parsley. Add in the spinach. Stir until mixed, the butter is melted and the spinach has wilted
- 5. Add the lemon juice before serving and serve while hot.

Steps:
- Heat oil in a large nonstick skillet over medium-high heat. Add onion and artichoke hearts and saute 5 minutes. Add one cup chicken broth, shrimp and garlic and saute 6 minutes. Add oregano, zest, juice, salt and pepper. Remove from heat; cover and keep warm.
- Bring 2 1/2 cups chicken broth to a boil in a medium saucepan. Slowly stir in grits; reduce heat to low. Cook 7 minutes or until thick and creamy, stirring occasionally. Stir in cheese. Spoon 1/2 cup grits into each of 4 bowls; top each with 1 cup shrimp mixture.
Tips:
- Use large shrimp: Jumbo or extra-large shrimp are best for this recipe because they hold up well to the cooking process and won't shrink too much.
- Vein the shrimp properly: To devein shrimp, make a shallow cut along the back of the shrimp and remove the dark vein. This will help to improve the texture and flavor of the shrimp.
- Use a good quality Parmesan cheese: Freshly grated Parmesan cheese is best for this recipe. It will melt smoothly and evenly, and it will add a delicious nutty flavor to the dish.
- Don't overcrowd the pan: When cooking the shrimp, be sure to not overcrowd the pan. This will prevent the shrimp from cooking evenly and will make them more likely to stick to the pan.
- Cook the shrimp until they are just cooked through: Overcooked shrimp are tough and chewy. Cook the shrimp just until they are opaque and pink, about 2-3 minutes per side.
- Serve the shrimp immediately: Shrimp Parmesan is best served immediately after it is cooked. This will ensure that the shrimp are hot and crispy, and the cheese is melted and gooey.
Conclusion:
Shrimp Parmesan is a classic Italian dish that is easy to make at home. By following these tips, you can make a delicious and flavorful Shrimp Parmesan that your family and friends will love.
