1 can (10-3/4 ounces) condensed cream of shrimp or mushroom soup, undiluted
1/4 cup water
1 teaspoon seafood seasoning
1 package (1 pound) frozen cooked medium salad shrimp, thawed
Hot cooked rice

  • In a saucepan, combine soup, water and seafood seasonings. Bring to boil. Reduce heat; stir in shrimp. Heat through. Serve over rice.

2 cups cooked brown rice ( I used white rice)
½ cup dry white wine
1 ½ T butter
½ t salt
¼ t black pepper
¼ t cayenne pepper
1 bay leaf
1 pound large shrimp, peeled and deveined
1 pound sea scallops
1 cup heavy cream
4 egg yolks, beaten
¼ cup cream sherry

Steps:

  • Heat oven to 325. Coat a 2 quart casserole with nonstick cooking spray. Spoon rice into prepared dish. In a medium sized skillet, combine the wine, butter, salt, black pepper, cayenne and bay leaf. Bring to a simmer. Add shrimp and cook for 4 minutes over medium heat. Remove shrimp and reserve. Add scallops and cook for 5 minutes. Remove scallops and reserve. Simmer cooking liquid for 4 minutes or until reduced to about 3 tablespoons. Remove bay leaf and discard. Reserve cooking liquid. In small saucepan, whisk together the cream and egg yolks. Heat over medium-high heat for about 2 minutes, whisking constantly, until thickened. (be careful with this. If you cook too long or get it too hot it can start to curdle!) Mix together shrimp, scallops, reduced cooking liquid and cream mixture. Spoon mixture evenly over the rice. Pour cream sherry over the top. Bake at 325 for 25 minutes. Let stand 15 minutes before serving. Garnish with chopped parsley.

  • In large skillet over medium heat, melt butter; add onion. Cook 3 minutes. Add shrimp; cook until barely pink. Ever since I can remember my mother has made a "quickie" version of "Shrimp on Toast" for a fast lunch. It was buttered toast, canned shrimp and a cream sauce. Fast to do, and tasted fast. Tonight I'm ratcheting it up a few notches for her. Hope she will like it. I know there are other baked versions of Newburg but I don't seem to be able to find one quite like this.

1 French bread
1 lb shrimp, raw in shell (any size)
1/4 cup butter
1/4 cup flour
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
2 cups whole milk
1/4 cup sherry wine
1/4 cup water (or chicken stock)
1/2 teaspoon curry powder
1/2 teaspoon paprika, hot
1 teaspoon pepper, coarse ground
1 teaspoon salt
1 cup mozzarella cheese, grated

Steps:

  • Preheat oven to 350°F
  • Slice the bread on the diagonal about 1/2 inch thick, and toast. You have to have enough slices to cover the bottom of a 9x9 ovenproof pan twice. Set toast aside.
  • Peel the shrimp and roughly chop. Set aside.
  • Heat the butter in a medium saucepan and sauté the onion and celery until softened. Add the flour and whisk. Slowly add in the milk and simmer until thickened. Let cook for one minute to get rid of the raw flour taste.
  • Stir in the sherry, water, curry, paprika, pepper and salt. Remove half of the sauce and set aside. (Note: the better the sherry the better the sauce will taste.).
  • Reheat remaining sauce in the saucepan to a simmer and add the shrimp and half the cheese. Cook until shrimp are almost done, about 1-2 minutes.
  • Place one layer of the toast in the bottom of the pan. Pour the shrimp mixture over the top and smooth out. Arrange remaining toast on top. Pour reserved sauce over the final layer of toast and sprinkle on remaining 1/2 cup of cheese.
  • Bake for about 25-30 minutes, or until bubbly on top.

1 1/2 lb shrimp, peeled and deviened
1/3 c butter
1/3 c flour
1 1/2 c milk
2 Tbsp dry sherry or chicken broth (i use sherry)
4 tsp fresh lemon juice
2 slice french bread, cut into 1/2 inch cubes
1 Tbsp butter, melted
salt and pepper

Steps:

  • 1. Cook shrimp in boiling salted water 1-3 minutes or until opaque. Drain.
  • 2. Preheat oven to 350°F. In medium saucepan melt 1/3 cup butter. Stir in flour. Add milk all at once. Cook and stir until thickened and bubbly. Stir in shrimp, sherry and lemon juice. Season to taste with salt and pepper.
  • 3. Coat 2-quart baking dish with nonstick cooking spray. Pour shrimp mixture into dish. Bake 15 to 20 minutes or until heated through.
  • 4. Meanwhile, stir together bread cubes and 1 tablespoon melted butter. Sprinkle over shrimp mixture. Bake 3 to 5 minutes more or until topping is toasted. Enjoy!
