2 tablespoons butter
2 pounds uncooked shrimp (31-40 per pound), peeled and deveined
2 garlic cloves, minced
1/2 cup white wine or chicken broth
2 cups shredded Monterey Jack cheese
2 tablespoons minced fresh parsley
Hot cooked linguine, optional

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium-high heat; saute shrimp and garlic just until shrimp turn pink, 3-5 minutes. Using a slotted spoon, transfer to a greased 11x7-in. baking dish. , Add wine to skillet; bring to a boil. Cook until liquid is reduced by half; pour over shrimp., Sprinkle with cheese and parsley. Bake, uncovered, until cheese is melted, 8-10 minutes. If desired, serve over linguine.

2 garlic cloves, minced
2 tablespoons butter or 2 tablespoons margarine
2 lbs medium shrimp, uncooked, peeled and deveined
1/2 cup white wine or 1/2 cup chicken broth
2 cups monterey jack cheese, shredded
2 tablespoons fresh parsley, minced

Steps:

  • In a skillet over medium heat, sauté garlic in butter for 1 minute.
  • Add shrimp; cook for 4-5 minutes or until pink.
  • Using a slotted spoon, transfer shrimp to a greased 11x7x2-inch baking dish; set aside and keep warm.
  • Add wine or broth to the skillet; bring to a boil.
  • Cook and stir for 5 minutes or until sauce is reduced.
  • Pour over shrimp; top with cheese and parsley.

8 ounces monterey jack cheese, shredded
2 (4 ounce) cans shrimp, drained well
1 (2 1/4 ounce) can sliced black olives, drained well
3/4 cup mayonnaise (not Miracle Whip)
1/4 cup sliced green onion

  • Mix together all ingredients in a microwavable safe serving dish (a quiche dish works well for this).
  • Microwave on HIGH for 3 minutes; stir.
