CRAB /SHRIMP DIP OR MOLD

Crab /Shrimp Dip or Mold image

This is a recipe that my sister, Garnet has made for years. It is really good and tasty and can be easily changed from a spoonable dip to a molded salad. Cooking time is chilling time. I decided to add a note here to encourage others to try this wonderful recipe. I recently hosted a wedding shower for my future DIL. I added 2 envelopes of Knox gelatin dissolved in about 1/4 cup of water so that the consistency would be good on Crescent Rolls for sandwiches. It was the hit of the party. Everyone loved it.

GERALDINE'S SHRIMP MOLD WITH ASSORTED CRACKERS RECIPE - (4.5/5)

GERALDINE'S SHRIMP MOLD WITH ASSORTED CRACKERS Recipe - (4.5/5) image

Provided by Lsweetnell

Number Of Ingredients 10

01 . one 10 3/4 oz. can of Campbell's condensed tomato soup
02 . 1/4 c. water
03 . one 1 oz. envelope "Knox" unflavored gelatin
04 . 1 c. Hellmann's mayonnaise (the mayo makes a difference (do not use that tangy stuff unless only you want to eat it.)
05 . 8 oz. Philadelphia brand cream cheese, softened
06 . two 4 oz. cans of cocktail shrimp, drained & mashed (or use 8 oz. fresh small shrimp finely chopped)
07 . 3/4 c. celery, finely chopped
08 . 3/4 c. onion, finely chopped
09 . Dash of salt & freshly ground black pepper
10 . 1 tsp. dried parsley flakes

Steps:

  • * In a small saucepan, bring soup to a boil and remove from heat. Pour into a mixing bowl. * Soften gelatin by pouring the ¼ cup of water into a small bowl and sprinkling the gelatin over the top. Let sit for a few minutes to soak up the water and then stir into the soup. Allow mixture to cool down while you chop the vegetables. * Whisk the mayonnaise and cream cheese together until smooth and creamy. Then whisk into soup mixture until well blended. Stir in the remaining ingredients. Pour mixture into a 5-cup mold that's been coated with a little cooking oil spray. A treasured old 5-6 cup Tupperware mold is ideal for this recipe. Cover and refrigerate for at least 8 hours or preferably overnight. * Invert mold onto a serving platter surrounded by assorted crackers!

Tips:

  • Use Fresh Shrimp: For the best flavor and texture, use fresh shrimp that is firm and has a slight briny smell. Avoid shrimp that is discolored or has an off odor.
  • Clean the Shrimp Properly: Before cooking, devein and peel the shrimp. Deveining removes the digestive tract, which can have a bitter taste. Peeling removes the shell, which makes the shrimp easier to eat.
  • Cook the Shrimp Properly: Shrimp cooks quickly, so it is important not to overcook it. Overcooked shrimp will become tough and rubbery. Cook the shrimp until it is pink and opaque, about 2-3 minutes per side.
  • Use a Variety of Vegetables: This recipe calls for celery, onion, and green pepper, but you can use any vegetables that you like. Some other good options include carrots, broccoli, and zucchini.
  • Use a Good Quality Mayonnaise: The mayonnaise is an important ingredient in this recipe, so it is important to use a good quality mayonnaise. Look for a mayonnaise that is made with fresh eggs and oil.
  • Chill the Mold: Before filling the mold with the shrimp mixture, chill it for at least 30 minutes. This will help the mold to set and make it easier to unmold the shrimp mold.

Conclusion:

Shrimp mold is a delicious and versatile dish that can be served as an appetizer, main course, or side dish. It is easy to make and can be tailored to your own taste preferences. Whether you are a fan of classic shrimp cocktail or you are looking for something new and exciting, this shrimp mold recipe is sure to please.
