ADOBO STYLE SHRIMP (FILIPINO)

Adobo Style Shrimp (Filipino) image

Yes, you can pretty much "adobo" anything. Here is an adapted recipe I found somewhere online that I tweaked a bit here and there. [The original recipe contained MSG as one of the ingredients.] I don't know if this is "authentic" per se, because all cooks have their own preferences, but it does follow the basic recipe. Hope you enjoy!

Time 11m

Yield 2-4 serving(s)

Number Of Ingredients 10

1 lb medium shrimp, unshelled
1/2 cup vinegar
1/4 cup water
1/8 cup soy sauce
5 garlic cloves, minced
1 tablespoon salt
1 teaspoon pepper
2 tablespoons cooking oil (or as you see fit)
1 tablespoon sugar
2 tablespoons scallions, to garnish (optional)

Steps:

  • Wash shrimp and cut off whiskers. Drain.
  • Place in pan or wok, add all ingredients except sugar and cooking oil.
  • Cook shrimp until not quite cooked on MED HEAT, maybe 2-4 minutes depending on your shrimp size.
  • Drain shrimp (along with garlic). Set sauce aside, and add the sugar.
  • Heat cooking oil and fry shrimp and garlic together on MED LOW HEAT.
  • When garlic is lightly browned, return the sauce to the pan and finish cooking shrimp.
  • [Be sure to not overcook the shrimp-- you can tell if they turn into little O's" instead of C's].
  • [Note: If you want a spicy "adobo", add 1 tablespoon of hot sauce or 1-2 minced hot peppers of your preference.].
  • Put on serving platter and garnish with chopped scallions (optional).
  • Serve with steamed Jasmine rice.

SHRIMP IN ADOBO SAUCE

Shrimp in Adobo Sauce image

Shrimp a la diabla ("devil shrimp") is a very popular spicy shrimp dish in Manzanillo, Mexico. After visiting I searched the internet for a recipe, and this was the closest I found. It is traditionally served with rice and vegetables (usually a mix of lightly steamed broccoli and carrots.) I haven't tried this recipe yet but it sounds delicious.

SHRIMP IN CHIPOTLE SAUCE

Shrimp in Chipotle Sauce image

A sauce just spicy enough to make your mouth tingle enveloping tender shrimp- this is fairly quick to prepare if you use pre- peeled shrimp. This recipe includes Cola which adds flavor as well as a touch of sweetness. The sauce is good spooned over white rice. I would not suggest using diet cola for this recipe. Adapted From William Sonoma Mexican.

Time 30m

Yield 4-5 serving(s)

Number Of Ingredients 10

8 garlic cloves, minced
1/4 cup fresh lime juice
sea salt & freshly ground black pepper
shrimp
3 tablespoons extra virgin olive oil
1/2 cup finely chopped white onion
4 ripe tomatoes, about 1 1/2 lbs. chopped or 2 (14 1/2 ounce) cans each chopped tomatoes, drained
2 canned chipotle chiles, en adobo with 1 tablespoon sauce
1/2 cup Coca-Cola or 1/2 cup Pepsi
1/4 teaspoon dried oregano, preferably Mexican

Steps:

  • In a bowl, stir together the garlic, lme juice, and sea salt and pepper to taste. Add the shrimp and toss until thoroughly coated. Let marinate while preparing the sauce, at least 5 minutes.
  • In a heavy frying pan or cazuela over medium-high heat, heat the olive oil. Add the onion and saute until golden, about 3 minutes. Add the tomatoes and cook, stirring constantly, just until the color deepens, less than 1 minute. Using a slotted spoon, transfer the tomato mixture to a blender, allowing any excess oil to drip back into the pan. Reserve th oil in the pan. Add the chiles an dsauce, cola, and oregano to the blender. Process until you get a textured sauce.
  • Remove the shrimp from the marinade and pat dry with paper towels. Return the pan with the reserved oil to medium-high heat and heat until the oil begins to shimmer. Add half of the shrimp and cook until opaque, about 2 minutes. Using the slotted spoon, transfer to a plate. Repeat with the remaining shrimp and add them to the plate.
  • Return the still-hot pan to medium-high heat and add the sauce. Fry, stirring frequently, until the sauce thickens and the flavors deepen, about 5 minutes. Stir in the shrimp and cook for 2 minutes longer just to heat through. Divide the shrimp evenly among warmed individual plates. Spoon some of the remaining chipotle sauce over each serving and serve at once.

Tips:

  • For the best flavor, use fresh shrimp. If using frozen shrimp, thaw them completely before cooking.
  • To make the adobo sauce, you can use either bottled or homemade adobo sauce. If using bottled adobo sauce, choose a brand that has a good balance of sweet, sour, and savory flavors.
  • If you don't have any adobo sauce, you can make your own by combining soy sauce, vinegar, garlic, and bay leaves. You can also add other spices, such as cumin, paprika, or chili powder, to taste.
  • To cook the shrimp, you can either fry them, grill them, or bake them. If frying the shrimp, be sure to use a large skillet or wok so that the shrimp don't overcrowd. If grilling the shrimp, preheat the grill to medium-high heat and cook the shrimp for 2-3 minutes per side, or until they are cooked through.
  • Once the shrimp are cooked, add them to the adobo sauce and simmer for a few minutes, until the shrimp are heated through and the sauce has thickened.
  • Serve the shrimp in adobo sauce with rice, vegetables, or your favorite side dish.

Conclusion:

Shrimp in adobo sauce is a delicious and easy-to-make dish that is perfect for any occasion. The adobo sauce is tangy, sweet, and savory, and it pairs perfectly with the tender shrimp. This dish is sure to be a hit with your family and friends.
