I make these with flour tortilla crusts. They are easy to make and absolutely fabulous.

4 burrito sized flour tortillas
ALFREDO SAUCE
3 Tbsp butter, unsalted
3 Tbsp all purpose flour
1 1/2 c milk
1/4 tsp freshly grated nutmeg
1 can(s) canned crabmeat, flaked (6 oz)
1/4 c parmesan cheese
salt & pepper to taste
ONIONS & MUSHROOMS
1 c onions, chopped
1 c mushrooms, fresh, sliced
1 Tbsp butter, unsalted
1 Tbsp olive oil, extra virgin
1 clove garlic, minced
1 Tbsp worcestershire sauce
SHRIMP
2 lb shrimp, peeled and deveined, raw
2 Tbsp butter, unsalted
2 Tbsp olive oil, extra virgin
1 clove garlic, minced
2 Tbsp cilantro, fresh, chopped
1 1/2 Tbsp old bay seasoning
juice of 1 lemon
TOPPERS
2 c italian cheese, shredded
3 Tbsp cilantro, fresh, chopped

Steps:

  • 1. Put tortillas on cookie sheets and bake at 350 for 5-10 min till they get crispy
  • 2. Make Alfredo sauce: melt butter in saucepan add flour stir and cook for 3-4 min till it loses that raw flour smell. Add milk, then seasonings simmer, stirring constantly till thickened and bubbly. Add crab and cheese. Stir to combine. Spread 1/4 of sauce on each tortilla
  • 3. In sauté pan, melt butter, add oil put in onion and sauté for about 4-5 min till translucent. Add mushrooms and garlic. Sauté another 2-3 min. Add Worcestershire sauce and stir to coat. Put 1/4 of mixture on each pizza.
  • 4. In same pan melt butter and add oil. Add shrimp, garlic, lemon and seasonings. Sauté till shrimp is pink. Place 1/4 of shrimp on each pizza.
  • 5. Top pizzas with cheese and cilantro. Bake at 350 for 10-12 min till cheese is melted. Serve hot. Can cut into pieces or serve whole.

1 package (6-1/2 ounces) pizza crust mix
3 tablespoons butter, divided
2 tablespoons all-purpose flour
3/4 cup whole milk
1/4 cup chicken broth
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded Swiss cheese
1/4 pound uncooked bay scallops, chopped
1/4 pound peeled and deveined cooked shrimp, chopped
1/4 pound imitation crabmeat, chopped
2 cups shredded part-skim mozzarella cheese
Paprika, optional

Steps:

  • Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

I recommend using the fake crab rather than canned, but fresh crab would be best. It's rich and delicious. I love to dip it in cocktail sauce. YUMMY!!

1 cup crabmeat (can be fresh or imitation)
1 1/2 cups shredded mozzarella cheese

3/4 pound large shrimp (about 16), peeled and deveined, tails removed

1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano cheese

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta, and boil according to package directions until al dente, tender but still slightly firm. Strain, and toss with a splash of oil.
  • Meanwhile, arrange the shrimp in a single layer on a large pie pan or paper plate, and pat them with a paper towel until completely dry. Season with salt and pepper.
  • Heat a large skillet over medium heat, and add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high, and invert the plate of shrimp over the skillet so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, until the underside is pink, 1 to 2 minutes. Flip the shrimp, and cook until fully pink and cooked through, about 2 minutes more. Transfer the shrimp to a bowl.
  • Reduce the heat to medium, and add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce warm.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the shrimp and cooked pasta, and toss well. Season with salt and pepper. Serve hot in heated bowls.
