SHRIMP & CRAB ALFREDO PIZZA
I make these with flour tortilla crusts. They are easy to make and absolutely fabulous.

Steps:
- 1. Put tortillas on cookie sheets and bake at 350 for 5-10 min till they get crispy
- 2. Make Alfredo sauce: melt butter in saucepan add flour stir and cook for 3-4 min till it loses that raw flour smell. Add milk, then seasonings simmer, stirring constantly till thickened and bubbly. Add crab and cheese. Stir to combine. Spread 1/4 of sauce on each tortilla
- 3. In sauté pan, melt butter, add oil put in onion and sauté for about 4-5 min till translucent. Add mushrooms and garlic. Sauté another 2-3 min. Add Worcestershire sauce and stir to coat. Put 1/4 of mixture on each pizza.
- 4. In same pan melt butter and add oil. Add shrimp, garlic, lemon and seasonings. Sauté till shrimp is pink. Place 1/4 of shrimp on each pizza.
- 5. Top pizzas with cheese and cilantro. Bake at 350 for 10-12 min till cheese is melted. Serve hot. Can cut into pieces or serve whole.

I adapted this rich treat from a friend's seafood enchilada dish. The thick creamy cheese sauce is an ideal match for the scallops, shrimp and imitation crabmeat. Plus, it's special enough for guests and can be made in a hurry.

- Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. This was created to mimic the wonderful seafood pizza we used to enjoy at Pizzeria Uno in Cincinnati Ohio. It's especially easy with a boboli crust but making your own crust may taste better. I recommend using the fake crab rather than canned, but fresh crab would be best. It's rich and delicious. I love to dip it in cocktail sauce. YUMMY!!

- Bring a large pot of water to a boil, and salt generously. Add the pasta, and boil according to package directions until al dente, tender but still slightly firm. Strain, and toss with a splash of oil.
- Meanwhile, arrange the shrimp in a single layer on a large pie pan or paper plate, and pat them with a paper towel until completely dry. Season with salt and pepper.
- Heat a large skillet over medium heat, and add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high, and invert the plate of shrimp over the skillet so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, until the underside is pink, 1 to 2 minutes. Flip the shrimp, and cook until fully pink and cooked through, about 2 minutes more. Transfer the shrimp to a bowl.
- Reduce the heat to medium, and add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce warm.
- Whisk the Parmigiano-Reggiano into the sauce. Add the shrimp and cooked pasta, and toss well. Season with salt and pepper. Serve hot in heated bowls.
