Tips:
- Use fresh, high-quality ingredients. This will make a big difference in the flavor of your muffins.
- Make sure your cornbread mix is fresh. Old cornbread mix can result in dry, crumbly muffins.
- Don't overmix the batter. Overmixing can make the muffins tough.
- Fill the muffin cups only about 2/3 full. This will allow the muffins to rise properly.
- Bake the muffins until a toothpick inserted into the center comes out clean. Overbaking can dry out the muffins.
- Serve the muffins warm with red pepper aioli. The aioli adds a delicious creamy and slightly spicy flavor to the muffins.
