1 cup ketchup
1/2 tablespoon prepared horseradish
1 teaspoon Worcestershire sauce
1/2 teaspoon soy sauce
1/2 teaspoon vodka
1/2 lemon, zested and juiced
Kosher salt and freshly ground black pepper
16 peeled and deveined cooked extra-large shrimp (about 1 pound), tail on
1/2 celery stalk, finely diced, plus 16 small celery stalks with leaves, for garnish

Steps:

  • Mix together the ketchup, horseradish, Worcestershire sauce, soy sauce, vodka and lemon zest and juice. Season with salt and pepper.
  • Transfer the sauce to 16 shot glasses, then top each with a shrimp and a sprinkle of diced celery. Place a celery stalk with leaves into each glass.

1 lemon, sliced in half
1 pound large (10/15 per pound) shrimp, peeled and deveined
1/4 cup fresh parsley sprigs
2 cloves garlic, smashed
Kosher salt
10 whole black peppercorns
Crushed ice
Spicy Cocktail Sauce (see recipe below)
Lemon-Basil Cocktail Sauce (see recipe below)
3/4 cup ketchup
1 tablespoon chipotle in adobo sauce
1 teaspoon prepared horseradish
1 tablespoon fresh lemon juice
1/2 cup sour cream
1/2 cup mayonnaise
2 tablespoons chopped fresh basil
2 tablespoons lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • Poach the shrimp: Add 6 cups of water to a medium-sized saucepan. Squeeze the lemon juice into the saucepan and then add in the lemon halves as well. Add the parsley sprigs, garlic, 1 teaspoon salt and peppercorns and bring to a simmer. Once the water is simmering, add the shrimp and cook until just opaque, 3 to 4 minutes. Remove the shrimp from the poaching liquid and chill completely.
  • To serve: Cover a platter with crushed ice and arrange the shrimp on top. Serve with the Spicy Cocktail and Lemon-Basil cocktail sauces.
  • Add the ketchup, chipotle, horseradish and lemon juice to a small bowl and whisk to combine.
  • Add the sour cream, mayonnaise, basil, lemon zest, 1/4 teaspoon salt and 1/4 teaspoon pepper to a small bowl and whisk to combine.

tomato juice or bloody mary mix
1 to 2 tbsp. worcestershire sauce or to taste
1 to 2 tbsp. prepared horseradish, or to taste
8 drops tabasco sauce or to taste
pepper to taste
8 oz. peeled cooked shrimp with tails, butterflied, about 20 shrimp

Steps:

  • 1. Mix 1 part vodka to 4 parts tomato juice in pitcher. Add Worcestershire, horseradish, Tabasco sauce, and pepper. Mix well. Fill twenty funky and mismatched shot glasses with the Bloody Mary mixture. Put one shrimp in each shot glass and garnish each with a short celery stick. Arrange shot glasses on serving platter and serve at once. You may prepare several hours in advance and store in refrigerator. Serves 20

2/3 cup olive oil
1/2 cup white balsamic vinegar
1 tablespoon chopped fresh cilantro
2 tablespoons grated lemon rind
1 teaspoon salt
1 teaspoon fresh ground pepper
1 teaspoon hot sauce
1 1/2 lbs peeled large cooked shrimp
romaine lettuce hearts, leaves

Steps:

  • To Make Vinaigrette:.
  • Whisk together olive oil, balsamic vinegar, and next 5 ingredients in a bowl.
  • For Shrimp:.
  • Place cooked shrimp and vinaigrette mixture in a large zip-top plastic freezer bag.
  • Seal and chill at least 8 hours or up to 24 hours, turning bag occasionally.
  • Arrange lettuce leaves in 8 (6- to 8-oz.) glasses.
  • Spoon shrimp mixture evenly into glasses.
