CAPRESE AND SHRIMP COCKTAIL SANDWICH

Caprese and Shrimp Cocktail Sandwich image

Hidemi turned shrimp cocktail into one amazing sandwich! I was expecting the cocktail sauce to have a lot of heat, but it did not. There's some spice, but it adds to the flavor of the sandwich. Avocado and fresh mozzarella added different textures. The basil/olive oil mixture adds the last pop of flavor. This is delicious!

Categories     Sandwiches

Number Of Ingredients 15

3 slice(s) white bread
6 - large frozen shrimp, thawed, peeled, deveined and tail removed
3 teaspoon(s) butter, unsalted, divided
1 teaspoon(s) white wine, dry
2 tablespoon(s) ketchup
1/4 teaspoon(s) lemon juice
2 teaspoon(s) horseradish wasabi paste
1/4 teaspoon(s) tabasco
1/2 - avocado, peeled and pitted
2 slice(s) tomato
2 slice(s) fresh mozzarella cheese
1/4 teaspoon(s) basil, dried
1 tablespoon(s) olive oil
- garlic salt to taste
- salt and pepper to taste

Steps:

  • Pat shrimp dry with paper towels and season with salt and black pepper.
  • Make cocktail sauce. In a bowl, mix together ketchup, horseradish wasabi paste, tabasco and lemon juice.
  • In a non-stick skillet, melt 1 teaspoon of butter over medium heat. Add shrimp and cook for 60-90 seconds. Flip and cook the other sides for about 30 seconds then add white wine and cook until the wine is evaporated tossing to coat frequently. Add the 2/3 of the cocktail sauce to the skillet and toss to coat. Remove the skillet from the heat and set aside.
  • Slice avocado lengthwise thinly.
  • In another bowl, mix together basil and olive oil. Add garlic salt and black pepper to taste.
  • Assemble sandwich. On both sides of one slice bread, spread 2 teaspoons butter (1 teaspoon for each side). On one side of the other one slice bread, spread the reserved 1/3 of the cocktail sauce. On one side of the other one slice bread, spread the basil mixture.
  • On the basil mixture spread slice bread, place tomato slices, mozzarella slices and avocado slices. Put the butter spread slice bread then put shrimp on the bread and put the cocktail sauce spread slice bread, sauce spread side down, to close sandwich. Press the top gently.

Tips:

  • Choose the right shrimp. For the best shrimp cocktail sandwiches, use large, fresh shrimp. Avoid shrimp that has been frozen, as it will be less flavorful and have a tougher texture.
  • Cook the shrimp properly. Shrimp should be cooked until it is opaque and pink. Do not overcook the shrimp, as this will make it tough and rubbery.
  • Make sure the shrimp is well-chilled. Before assembling the sandwiches, make sure the shrimp is well-chilled. This will help to keep the sandwiches refreshing and prevent the shrimp from becoming warm and mushy.
  • Use a variety of toppings. In addition to the classic shrimp cocktail sauce, there are a variety of other toppings that you can use on your shrimp cocktail sandwiches. Some popular options include avocado, bacon, cucumber, and lettuce.
  • Serve the sandwiches immediately. Shrimp cocktail sandwiches are best enjoyed when they are served immediately. This will help to prevent the bread from becoming soggy and the shrimp from becoming warm and mushy.

Conclusion:

Shrimp cocktail sandwiches are a delicious and easy-to-make appetizer or lunch option. By following the tips above, you can make sure that your shrimp cocktail sandwiches are perfect every time. So next time you're looking for a quick and easy meal, give shrimp cocktail sandwiches a try!
