MINI SHRIMP COCKTAIL APPETIZERS

Mini Shrimp Cocktail Appetizers image

From Kraftfoods(dot)com website. I made these for a party and I've had so many people request the recipe. Kraft calls for using finely chopped onions but I skipped that just to make it an even faster appetizer to get on the table.

SHRIMP COCKTAIL - A CLASSIC APPETIZER

Shrimp Cocktail - a Classic Appetizer image

Many say this is a retro appetizer that is "hip" again. I don't remember it ever going out of style. Large shrimp, in my opinion, are better, but any size you can find will do.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 11

1 lb jumbo shrimp (16 to 20 count)
1/2 cup ketchup
1 teaspoon chili powder
3 tablespoons freshly-squeezed lemon juice
salt & freshly ground black pepper (to taste)
1 tablespoon Worcestershire sauce (to taste)
3 drops Tabasco sauce (or other hot sauce)
1 tablespoon prepared horseradish (to taste)
1 tablespoon minced onion (optional)
iceberg lettuce (optional)
lemon slice, for garnish (optional)

Steps:

  • Put the shrimp in a large pot over high heat with water to cover. Salt the water, and when it boils, reduce the heat to medium-low and cook until the shrimp are pink all over, 3 to 5 minutes.
  • Combine all the other ingredients, except lettuce and lemon slices; taste and adjust the seasonings. If time allows, chill both the shrimp and sauce; peel and devein the shrimp, leaving the tails intact.
  • Serve individual servings of shrimp, on a bed of lettuce, if you like, with a small bowl of sauce. Garnish with lemon slices, if desired.

Tips:

  • For the best flavor, use fresh shrimp. If using frozen shrimp, thaw them completely before cooking.
  • To devein the shrimp, use a sharp knife to make a shallow cut along the back of the shrimp, from the head to the tail. Remove the vein and discard it.
  • If you don't have a shrimp cocktail sauce, you can make your own by combining ketchup, mayonnaise, horseradish, lemon juice, and Worcestershire sauce.
  • To make the soup ahead of time, cook the shrimp and vegetables according to the recipe. Let the soup cool completely, then transfer it to an airtight container and refrigerate for up to 3 days. When you're ready to serve, reheat the soup over medium heat until warmed through.
  • Garnish the soup with fresh parsley or dill before serving.

Conclusion:

Shrimp cocktail appetizer soup is a delicious and easy-to-make soup that is perfect for any occasion. It is made with fresh shrimp, vegetables, and a creamy sauce. The soup can be served hot or cold, and it is sure to be a hit with your guests. So next time you're looking for a quick and easy soup recipe, give this shrimp cocktail appetizer soup a try.
