CLAM DIP

Clam Dip image

Here now a taste of New England game days circa the time when televisions had dials instead of remotes and, if you couldn't get fresh clams to steam and chop, a can or two from the supermarket would do just fine. (That's still true!) The recipe comes from Brendan McCarthy, a saltwater fishing guide whose charters range from Brooklyn to Montauk, and south to Florida, the Bahamas and the azure waters off Panama, but whose tastes and kitchen skills were first developed in New England and see an apogee in the simplicity of this recipe. The dip benefits from some curing time in the refrigerator and, for some, a heavy hand on the cayenne.

1/2 teaspoon cayenne pepper, or to taste
1/2 teaspoon kosher salt, or to taste

Tips:

  • Mise en Place: Gather and prepare all ingredients before starting to cook to ensure a smooth and efficient cooking process.
  • Fresh Ingredients: Use fresh shrimp, clams, and vegetables for the best flavor and texture in your dip.
  • Properly Clean Seafood: Devein the shrimp and clean the clams thoroughly before cooking to remove any grit or impurities.
  • Don't Overcook Seafood: Cook the shrimp and clams just until they are opaque to prevent them from becoming tough and rubbery.
  • Use High-Quality Cream Cheese: Opt for full-fat cream cheese for a rich and creamy dip.
  • Season Generously: Use a combination of herbs, spices, and seasonings to create a flavorful dip. Don't be afraid to adjust the seasonings to your taste.
  • Chill Before Serving: Refrigerate the dip for at least 30 minutes before serving to allow the flavors to meld and develop.
  • Garnish Elegantly: Top the dip with fresh chopped herbs, grated Parmesan cheese, or a drizzle of olive oil to enhance its presentation.

Conclusion:

The shrimp clam dip is a delightful appetizer that combines the briny flavors of seafood with a creamy and flavorful dip. Its versatility allows it to be served with various accompaniments, making it perfect for parties, potlucks, or gatherings. With careful attention to ingredient quality, cooking techniques, and presentation, you can elevate this dip from ordinary to extraordinary. So, gather your ingredients, put on your apron, and embark on a culinary journey to create a dip that will leave your taste buds dancing with joy.
