SHRIMP AND SPANISH CHORIZO BITES RECIPE - (4.1/5)

Shrimp and Spanish Chorizo Bites Recipe - (4.1/5) image

Provided by jads8627

Number Of Ingredients 8

1/2 pound medium shrimp (about 30 shrimp), peeled and deveined if necessary
1 (7.9 ounce) package of Spanish chorizo, sliced into 1/4-inch rounds
1 clove garlic, finely minced
1/2 teaspoon dried oregano
1 Tablespoon red wine vinegar
1 Tablespoon dry Sherry
1/4 cup extra virgin olive oil, plus more for the pan
2 Tablespoons chopped fresh flat-leaf parsley

Steps:

  • In a medium bowl, combine the shrimp, garlic, oregano, vinegar, Sherry, and 1/4 cup of the olive oil; toss to coat. Marinate in the refrigerator for 30 minutes. Skewer one shrimp and one round of chorizo onto wooden toothpicks or skewers. Repeat with the remaining shrimp and chorizo. Working in batches, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place a few skewers into the pan and sear on both sides until the shrimp are cooked through and the chorizo is lightly browned, about 3 to 4 minutes. Transfer the skewers to a serving platter and garnish with the parsley. Serve immediately. Enjoy!

Tips:

  • Choose the right shrimp: Use large, fresh shrimp for the best results. Look for shrimp that are firm and have a translucent appearance.
  • Properly devein the shrimp: Deveining the shrimp will remove the digestive tract and any grit or sand that may be present. Use a sharp knife to make a shallow incision along the back of the shrimp, then use your fingers to remove the vein.
  • Use a food processor to make the shrimp mixture: This will help to create a smooth and consistent texture. Pulse the shrimp, onion, garlic, and egg in a food processor until they are finely chopped.
  • Shape the shrimp mixture into balls: Use your hands to shape the shrimp mixture into 1-inch balls. Be sure to pack the shrimp mixture tightly so that the balls hold their shape.
  • Coat the shrimp balls in panko breadcrumbs: This will help to create a crispy coating. Place the shrimp balls in a bowl and toss them with the panko breadcrumbs until they are evenly coated.
  • Bake the shrimp balls until they are golden brown: Bake the shrimp balls in a preheated oven at 425 degrees Fahrenheit for 15-20 minutes, or until they are cooked through.
  • Serve the shrimp balls with your favorite dipping sauce: Serve the shrimp balls immediately with your favorite dipping sauce, such as cocktail sauce, tartar sauce, or sweet and sour sauce.

Conclusion:

Shrimp bites are a delicious and easy-to-make appetizer or snack. They are perfect for parties or gatherings, and they can also be enjoyed as a meal on their own. With their crispy coating and tender, juicy interior, shrimp bites are sure to be a hit with everyone who tries them.
