Number Of Ingredients 15

1/2 pound dry egg noodles or fettuccine
4 tablespoons olive oil
1 cup coarsely chopped red onions
1 pound small zucchini, cut into 1-inch thick slices, about 3 cups
2 sweet red peppers, cored and seeded, cut into 1/2-inch cubes
Salt and freshly ground pepper to taste
1 1/4 pounds medium shrimp, peeled and deveined
6 ripe plum tomatoes, cut into 1/2-inch cubes
1 tablespoon finely chopped garlic
1 tablespoon finely chopped ginger
1/4 teaspoon red pepper flakes
1/4 cup pitted small green olives
1/2 teaspoon saffron stems
4 tablespoons fresh chopped coriander or basil
1 tablespoon red-wine vinegar

Steps:

  • Bring salted water to a boil, add the noodles, stir and cook according to package instructions. The pasta should be al dente. Drain and reserve 1/4 cup of cooking liquid.
  • Meanwhile, heat 2 tablespoons of the olive oil in a large skillet or wok. Add the onions, zucchini, red peppers, salt and pepper. Cook, stirring, over high heat until wilted, about 3 minutes.
  • Add the shrimp, tomatoes, garlic, ginger, pepper flakes, olives and saffron. Cook and stir about 3 minutes longer over high heat.
  • Add the remaining 2 tablespoons olive oil, the drained noodles, the basil or coriander, the vinegar and, if needed, the reserved cooking liquid. Toss and stir well. Bring to a simmer and cook for 2 minutes. Serve immediately.

5 cups water
2 tablespoons lemon juice
1/2 teaspoon salt
2 pounds orange roughy fillets
1 pound uncooked medium shrimp, peeled and deveined
1/2 pound bay scallops
2 tablespoons butter
3 tablespoons all-purpose flour
1 teaspoon chicken bouillon granules
1 teaspoon Dijon mustard
Dash pepper
1 cup heavy whipping cream
1 cup shredded Gruyere or Swiss cheese
Hot cooked pasta

Steps:

  • In a Dutch oven, bring the water, lemon juice and salt to a boil. Reduce heat; carefully add fillets and cook, uncovered, for 4 minutes. Add shrimp; cook for 3 minutes. Add scallops; cook 3-4 minutes longer or until fish flakes easily with a fork, shrimp turn pink and scallops are firm and opaque. Strain, reserving 1-1/2 cups cooking liquid., In a large saucepan, melt butter. Stir in the flour, bouillon, mustard and pepper until smooth. Gradually add cream and reserved liquid. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in the cheese and seafood mixture; heat through. Serve with pasta.

2 tablespoons (1/4 stick) butter
4 tablespoons olive oil
1 tablespoon minced garlic
1 teaspoon dried basil, crumbled
1 teaspoon fennel seeds, crushed
1/2 pound medium uncooked shrimp, peeled, deveined
1/2 pound scallops
8 ounces linguine, freshly cooked
1/3 cup grated Parmesan
Additional grated Parmesan

Steps:

  • Melt butter with 2 tablespoons oil in heavy large skillet over medium heat. Add garlic, basil and fennel and sauté 1 minute. Add shrimp and scallops and sauté until both are just opaque, about 4 minutes.
  • Place linguine in bowl. Toss with remaining 2 tablespoons oil. Pour sauce over linguine and toss. Add 1/3 cup Parmesan and toss again. Pass additional Parmesan separately.

1 cup loosely packed fresh basil leaves
1/4 cup lemon juice

3/4 pound uncooked medium shrimp, peeled and deveined

This is my own concoction..out of frustration over loosing flavor in my pasta salads..this method works..and the flavor has been a big hit I have found that NOT rinsing the pasta it absorbs the good flavors into the noodles..and even though is gets sticky the sauce will loosen it again

1 box egg lo mein noodles
3 Tbsp hidden valley ranch dry mix
1/2 c sour cream
1/2 c mayonnaise
1 lb salad shrimp
1/2 c celery chopped
1 red bell pepper
1 seeded tomatoe
1 c frozen peas
1 c frozen corn

Steps:

  • 1. Boil lo mein noodles 4 minutes..drain..DO NOT RINSE..spread on a cookie sheet..sprinkle with 1 Tbs of dry hidden valley ( reserve remaining to make dressing)..gently toss..let cool with a damp towel over it for over night..(at least 2 hours refig.) It is going to look stiff..
  • 2. Chop all vegetables..put noodles in a big bowl..use kitchen shears and cut up into shorter lengths..add vegetables and cooked shrimp
  • 3. Mix the sour cream and mayo with reserved dry hidden valley ranch ( do not subsitute..I buy the jar of hidden valley instead of the packets) mix with pasta...add a little milk or cream if you like a thinner dressing
  • 4. let salad sit in frig for 30 minutes and enjoy
