500 g / 1lb spaghetti
4 tbsp olive oil
4-6 garlic cloves (thinly sliced)
1-2 tsp chilli / red pepper flakes
500 g (1lb) shrimp (peeled and deveined)
½ cup grated Parmesan
½ cup parsley (finely chopped )

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente.
  • Heat a large frying pan/skillet over medium-high heat then add the oil and garlic.
  • Add the chilli flakes and toast until the garlic starts to turn golden.
  • Add the shrimp and cook until pale pink and opaque throughout. Season with salt and pepper and add lemon juice. Add a few tablespoons of the pasta's cooking water and remove from the heat.
  • Once the pasta is cooked, carefully transfer the cooked spaghetti to the pan with the shrimp with a pair of tongs. Add a few tablespoons of the pasta cooking water and toss to emulsify.
  • Add the Parmesan and parsley and continue tossing until the pasta is well coated. At this point, you can add more water if you think the pasta needs a little extra sauciness. Taste and season to taste if necessary then serve with extra Parmesan.

2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes
1 pound shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ cup dry white wine
1 lemon, juiced
2 tablespoons butter
2 tablespoons extra-virgin olive oil
¼ cup finely chopped fresh parsley leaves
1 teaspoon extra-virgin olive oil, or to taste

Steps:

  • Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
  • Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
  • Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. 2 slices bacon, coarsely chopped
2 tablespoons tomato paste
2 tablespoons packed fresh rosemary leaves
1 cup mixed olives
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 pint cherry tomatoes, halved
1 pound fresh or thawed frozen medium shrimp, peeled and deveined
Grated Pecorino Romano, for serving (optional)

Steps:

  • Bring a large pot of generously salted water to a boil. Cook pasta until al dente. Reserve 1 1/2 cups pasta water; drain.
  • Meanwhile, cook bacon in a large straight-sided skillet over medium heat until most of fat is rendered but bacon is still pliable, about 4 minutes.
