SHRIMP AND MUSHROOM CASSEROLE

Shrimp and Mushroom Casserole image

This is heavenly. Rich and creamy, not for those watching their weight. I often add a half a cup of monterey jack cheese and I always substitute Frenche's Fried onions for the bread crumbs, just grind them up in the food pro. Very pretty in individual ramikins.

CREAMY SHRIMP CASSEROLE

My grandmother's special recipe and a family favorite in our house. Shrimp, egg noodles, peas and a few mushrooms layered in creamy sauce. Although this recipe yields quite a bit, my family of 4 usually devours the whole dish in one sitting.

Time 1h35m

Yield 8

Number Of Ingredients 12

1 pound shrimp, peeled and deveined
1 teaspoon salt
3 cups wide egg noodles
2 tablespoons butter
1 ½ tablespoons all-purpose flour
2 ½ cups milk
½ cup heavy cream
salt and ground black pepper to taste
1 cup frozen green peas, thawed
1 (4.5 ounce) can sliced mushrooms, drained
1 cup crushed buttery round crackers
1 tablespoon cold butter, thinly sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 3-quart casserole dish.
  • Fill a large pot with water, and bring to a boil over high heat. Stir in the shrimp, reduce heat to a simmer, and cook the shrimp until opaque and bright pink, about 3 minutes. Remove the shrimp to a bowl with a slotted spoon. Return the water to a full rolling boil over high heat, and stir in the noodles. Cook until the noodles are tender, about 8 minutes; drain in a colander set in the sink.
  • Melt 2 tablespoons of butter in a saucepan over medium heat, and stir the flour into the butter to make a paste. Remove the pan from the heat; slowly whisk in the milk and cream until smooth. Season to taste with salt and black pepper. Return the sauce to the heat, lower heat to a simmer, and whisk constantly until the sauce thickens, about 5 minutes.
  • Place noodles into the prepared casserole dish, and top with peas, mushrooms, and cooked shrimp. Pour the sauce over the casserole, and sprinkle the crushed cracker crumbs evenly over the top. Dot the top of the casserole with about 6 thin slices of butter.
  • Bake in the preheated oven until the cracker topping is crisp and golden brown, about 1 hour.

Tips:

  • Prep Work: Before cooking, make sure to clean and chop the shrimp, mushrooms, and other vegetables according to the recipe's instructions. This will help the casserole come together quickly and evenly.
  • Sauce Consistency: The sauce should be thick enough to coat the shrimp and vegetables, but not too thick that it becomes clumpy. If it's too thick, add a little milk or broth until it reaches the desired consistency.
  • Don't Overcook the Shrimp: Shrimp cooks quickly, so it's important not to overcook it. Overcooked shrimp will become tough and rubbery. Cook it just until it turns pink and opaque, about 2-3 minutes.
  • Use Fresh Ingredients: Using fresh, high-quality ingredients will make a big difference in the taste of your casserole. Choose shrimp that are firm and have a slight briny smell. Mushrooms should be firm and dry, without any slimy spots.
  • Season Generously: Don't be afraid to season the casserole with salt, pepper, and other spices. This will help bring out the flavors of the shrimp, mushrooms, and vegetables.

Conclusion:

This shrimp and mushroom casserole is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover shrimp and mushrooms, and it can be easily customized to suit your own preferences. With its creamy sauce, tender shrimp, and flavorful mushrooms, this casserole is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy weeknight meal, give this shrimp and mushroom casserole a try. You won't be disappointed!
