The recipe for this low-fat bread came from my grandmother. It's now my husband's favorite. Nothing makes the house smell better than the aroma of molasses as this bread bakes.

Yield 2 loaves (16 slices each).

Number Of Ingredients 9

2 cups boiling water
1 cup crushed Shredded Wheat cereal
1/2 cup molasses
2 tablespoons shortening
1-1/2 teaspoons salt
1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
5-1/2 to 6-1/2 cups all-purpose flour
Melted butter, optional

Steps:

  • In a large bowl, pour boiling water over cereal. Add the molasses, shortening and salt. Let stand until mixture cools to 110°-115°, stirring occasionally. , In a bowl, dissolve yeast in warm water. Add cereal mixture and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 1 hour. , Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks. Brush with melted butter if desired. Cool.

2 large shredded wheat biscuits, crumbled
1 1/8 cups warm water
2 cups whole wheat flour
1 cup all-purpose flour
1 tablespoon gluten (optional)
1/4 teaspoon vitamin C powder (optional)
1 1/2 teaspoons salt
1 1/2 tablespoons butter or 1 1/2 tablespoons margarine
2 tablespoons brown sugar
2 tablespoons honey
2 teaspoons active dry yeast

Steps:

  • Follow steps according to your bread machine.
  • set on light crust setting.
  • The original recipe calls for all whole wheat flour.
  • and no all purpose flour.
  • I have also used Robin Hood Multi grain flour-- I always put in 1 tbsp.

Making bread is one of my favorite things to do, I found this in an old bread cook book I have. It makes one big loaf of bread, you can make 2 smaller loaves if you prefer. This has a really nice texture and flavor.

Number Of Ingredients 7

2 large shredded wheat biscuits, or 1 cup of grape-nuts
2 c boiling water
1/4 c ganulated sugar
1/4 c butter
3 tsp yeast
1 tsp salt
4 c flour, all purpose flour plus 1/2-1 cup more when kneading dough

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. combine crumbled shredded wheat with the boiling water, sugar, and butter, give it a quick stir and let sit, cool until only lukewarm
  • 3. add in the yeast and stir until dissolved.
  • 4. Blend in the salt and the flour, then transfer to a oiled bowl, cover and let sit until doubled,(about 40 minutes)
  • 5. Punch dough down and on a bread board knead the dough adding more flour if necessary to make a firm dough that can be easily shaped
  • 6. shape dough into a loaf and and place in buttered bread pan, cover and let rise again until doubled,
  • 7. Bake in preheated oven about 30-40 minutes or until hollow sounding when tapped and top is golden, ( about 30 minutes in my oven)
  • 8. You can use 1 cup of Grape-nuts instead of shredded wheat I have only made this recipe with the shredded wheat. If you prefer you can shape dough in to rolls, and bake at 400 degrees for 20 minutes

Tips:

  • Use fresh shredded wheat: Fresh shredded wheat will provide the best flavor and texture to your bread. If you don't have fresh shredded wheat, you can use store-bought, but make sure it's unsweetened and plain.

  • Use a stand mixer or bread maker: A stand mixer or bread maker will make it much easier to mix and knead the dough. If you don't have either of these appliances, you can mix and knead the dough by hand, but it will take a bit more time and effort.
  • Let the dough rise in a warm place: The dough needs to rise in a warm place in order to double in size. You can place it in a warm oven or in a sunny spot in your kitchen.
  • Bake the bread until it's golden brown: The bread is done baking when it's golden brown and sounds hollow when you tap on it.
