This is a zesty and garlicky salad that our family loves. It is adapted from one of my favorite cookbooks - Ellen Helman's "The Uncommon Gourmet". Ellen suggests garnishing the salad with toasted pine nuts. We like it plain but will occasionally add such garnishes as chopped tomato, croutons or diced cucumber...whatever we're in the mood for.

2 heads romaine lettuce, washed, dried and cut into 1/2 inch strips
1 garlic clove, crushed (or more to taste)
2 teaspoons Dijon mustard
salt, to taste
freshly ground pepper, to taste
3 tablespoons white wine vinegar
1/3 cup extra virgin olive oil
2 tablespoons parmesan cheese, grated
1/4 cup pine nuts, lightly toasted (optional)

Steps:

  • Place the shredded romaine in a salad bowl.
  • In a separate small bowl, combine the garlic, mustard, salt, pepper, and vinegar.
  • Whisk in the oil until completely incorporated.
  • Stir in the Parmesan.
  • Pour the dressing over the romaine; toss to mix.
  • Garnish with toasted pine nuts (or other toppings of your choice - chopped tomatoes, croutons, diced cucumbers, etc.).
  • Serve at once.
  • (Leftovers will wilt - only toss as much as you will eat at any meal).

1 large head of romain lettuce, cut into small pieces
1/4 c. pine nuts, lightly toasted (place on cookie pan for 5-10 min. @ 350. watch closely...they burn quickly!)
HOT MUSTARD
4 OZ tin Colman's dry mustard
1 cup sugar
1/8 tsp cayenne pepper
1 cup cider vinegar
In saucepan, mix mustard, sugar,& pepper. Add the vinegar, stirring well. Let mixture sit for 4 hrs.
Heat mustard over med-high heat, stirring constantly until mixture comes to a boil.
Remove from heat & pour into a well-sealed container. Cover & let cool completely b/f refrigerating.
One recipe makes 2 cups.

Steps:

  • Parmesan Dressing 1. 1 large clove garlic, smashed 2. 1 tsp Hot Mustard (see recipe) 3. salt & pepper to taste 4. 2 tablespoons white vinegar 5. 1/3 cup vegetable oil 6. 2 tablespoons Parmesan cheese. 1. Place shredded romain & pine nuts in large salad bowl. 2. In a separate small bow, comine the garlic, mustard, salt, pepper,& vinegar. Whisk in the oil until completely incorporated. Stir in Parmesan cheese. 3. Cover the romain w/ the dressing & toss to mix. Serve at once.
