Tips:

  • Shred the chicken ahead of time: This will save you time when you're ready to assemble the quesadillas. You can shred the chicken in a food processor or with two forks.
  • Use a variety of cheeses: Monterey Jack, cheddar, and mozzarella are all great choices for quesadillas. You can also use a blend of cheeses for a more complex flavor.
  • Don't overcrowd the quesadillas: If you put too much filling in the quesadillas, they will be difficult to fold and cook evenly. Aim for about 1/2 cup of filling per quesadilla.
  • Cook the quesadillas over medium heat: This will help to prevent the tortillas from burning. Cook the quesadillas for about 2-3 minutes per side, or until they are golden brown and the cheese is melted.
  • Serve the quesadillas with your favorite toppings: Salsa, guacamole, sour cream, and Pico de Gallo are all great options. You can also add a side of rice and beans for a complete meal.

Shredded chicken quesadillas are a quick and easy meal that is perfect for busy weeknights. They are also a great way to use up leftover chicken.
