200 g plain flour
300 g cold unsalted butter, cubed
1 egg yolk
1 whole egg
salt

Steps:

  • The ingredients need to be cold before you start.
  • Place the flour in a bowl with a little salt, to taste.
  • Then throw in the butter and use your fingertips to rub it into the flour until you get a crumbly, sand-like texture.
  • Mix in the egg yolk and egg, just until they are both incorporated.
  • At this point the dough will be wet and difficult to roll out.
  • Lay some clingfilm on your counter and place the dough on top.
  • Cover with more clingfilm.
  • Roll lightly to flatten, then leave to rest in the fridge for at least one hour.
  • Shape as desired, then cook at 150 C or 300 F until golden.
  • For a round shortbread using all the dough, this will probably take about 30 minutes.

Tips:

  • Use cold butter: Cold butter is less likely to spread when baking, resulting in a more flaky pastry.
  • Work quickly: The less you handle the dough, the less likely it is to become tough.
  • Chill the dough before baking: Chilling the dough allows the gluten to relax, resulting in a more tender pastry.
  • Bake the pastry in a preheated oven: This will help the pastry to rise evenly and prevent it from becoming too dry.
  • Do not overbake the pastry: Overbaking will dry out the pastry and make it tough.

Conclusion:

Shortbread pastry is a delicious and versatile pastry that can be used for a variety of desserts. With its simple ingredients and easy-to-follow instructions, shortbread pastry is a great choice for both beginner and experienced bakers. Whether you are making a classic shortbread cookie or a more elaborate tart, these tips will help you create a perfect shortbread pastry every time.
