SOMETHING DIFFERENT GREEN BEAN AND CORN CASSEROLE
Adapted from Southern Living. This is very different from the usual green bean casseroles out there. I prefer sweet onions such as Walla Walla or Vidalia, but ordinary cooking onions are fine too. French style green beans are regular green beans that have been thinly sliced. If all you have is the regular kind, simply slice them into thin strips with a knife or use them whole.

Steps:
- 1. Mix all ingredients together except margarine and crackers.
- 2. Pour into a sprayed 13x9x2-inch baking dish.
- 3. Sprinkle crushed crackers on top and then evenly distribute margarine over crackers.
- 4. Bake in a 350 degree oven for 35 minutes.
- 5. NOTE: I use 1 stack of Town House or Ritz for the crackers.
Tips:
- Fresh is best: Use fresh shoepeg corn and green beans for the best flavor and texture.
- Don't overcook the vegetables: Cook the corn and beans just until they are tender-crisp. Overcooking will make them mushy.
- Use a good quality cheese: The cheese is one of the key ingredients in this casserole, so use a good quality cheddar or Parmesan cheese.
- Season to taste: Add salt and pepper to taste. You can also add other spices, such as garlic powder or onion powder, if desired.
- Serve immediately: This casserole is best served immediately after it is made. The corn and beans will start to lose their crunch if the casserole is allowed to sit for too long.
Conclusion:
Shoepeg corn and green bean casserole is a classic side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its creamy sauce, tender vegetables, and cheesy topping, this casserole is sure to be a hit with everyone at your table.
