3 medium potatoes
1 lb hamburger, uncooked
1/2 cup uncooked white rice

  • Slice onions in the bottom of a baking dish. Add thinly sliced potatoes.
  • Over potatoes spread hamburger. Next add uncooked rice. top with a layer of chopped celery.

1-2 clove garlic, minced
1 large onion, chopped
2 medium potatoes, washed but not peeled, then sliced
1 c uncooked rice
1 c diced celery
2 c kidney beans, drained

1 c juice drained from tomatoes
salt and pepper to taste

Steps:

  • 1. Lightly brown beef in skillet with garlic, drain, and add salt, pepper and some Worchestershire sauce to it. Beef should still be rare as it will continue to cook in the oven.
  • 2. In a large casserole dish layer onion, then potatoes. Sprinkle some salt and pepper on potato layer. Add ground beef. Make the next layer rice, then celery, then kidney beans, tomatoes, and finally tomato juice. Add some more salt and pepper if desired. Bake at 350 degrees for 2 hours.

1 lb lean ground beef
1 teaspoon vegetable oil
1 cup chopped onion
1 tablespoon Worcestershire sauce (i always add a splash more)
1 teaspoon bottled minced garlic (i use fresh)
1/2 teaspoon seasoning salt, such as Lawry's or 1/2 teaspoon plain salt
1 cup chopped green bell pepper
15 1/2 ounces beef broth, fat removed
1 3/4 cups Minute Rice
1 cup frozen corn kernels (canned works also)
ground black pepper

Steps:

  • If the beef is frozen, run hot water over it so that you can remove any packaging. Place the beef on a microwave-safe plate and microwave 3 minutes, uncovered, at high, to begin defrosting.
  • Heat the oil over medium heat in an extra-deep 12 inch nonstick skillet that has a lid. Add onion to the skillet.
  • Add the beef (fresh or partly defrosted) to the skillet and raise the heat to high.
  • Cook, turning and breaking up the meat and stirring from time to time until the meat is crumbled and brown, about 5 minutes.
  • While the meat cooks, add the worcestershire sauce, garlic, and seasoning salt. Rinse and seed the bell pepper and cut it into bite size pieces. Set aside.
  • Open the beef broth and remove all visible fat. Measure out the rice and set aside. Add the broth to the skillet. Add the rice green pepper and corn. Stir well and cover the skillet. Reduce the heat to medium high.
  • Boil, covered, 3 minutes. Uncover and stir well. Cover and continue to boil until the rice is tender and absorbs most of the broth, about 2 more minutes. Season with black pepper to taste. Serve at once or remove from the heat until ready to serve. (don't overcook!).
  • Recipe note: Half a cup of frozen green peas can subsitute for the green pepper.

2-3 potatoes, sliced thin (I use russet, use a mandoline to slice uniformly)
1 onion
1 large can pork and beans (I use 1 lg and 1 small can)
1 can tomato soup (I use 2)

Steps:

  • Preheat oven to 350°F. Saute the onions until translucent (about 5 or 6 min). Add hamburger and brown. I use lean burger so there is no need to drain after. In a greased casserole dish (or oven-friendly skillet), place the potatoes in a uniform layer on the bottom of the dish. Empty the can(s) of beans over the potatoes and distribut evenly. Top the beans with the hamburger/onion mixture. Finally spoon the tomatos soup (undiluted) over the top. Bake, uncovered, for 1 1/2 hours. Note: parboil the potatoes is you don't/can't thin-slice the potatoes. I set my mandoline on 1/8. Otherwise you could end up with al dente taters.

6 Tbsp. Lea and Perrins Thick Classic Worcestershire Sauce
6 Tbsp. A-1 Original Steak Sauce
6 Tbsp. Huy Fong Foods Sambal Oelek (or comparable Chili Paste found in Asian specialty section of market), or to taste
1 Qt. Tomatoes, canned or jarred

Steps:

  • Preheat oven to 350 Fahrenheit, or set a large capacity slow cooker to high. While browning one pound hamburger over medium heat, wash and peel potatoes. Slice potatoes into 1/2" round or semicircle pieces and cover the bottom of a slow cooker or roasting pan evenly. Layer sliced onion evenly over potatoes. Remove browned hamburger from heat and drain excess fat and liquid from pan. Set browned hamburger aside. Wash and cut celery and carrots into bite size pieces, preferably 1/2" thick rounds. Layer celery evenly, then carrots evenly over onions and potatoes. Spread drained and rinsed kidney beans evenly on top of carrot layer. Transfer hamburger to cover layered veggies. Salt and pepper liberally; finishing with equal amounts of Worcestershire, A-1, and Chili paste to covering around 40% of top hamburger layer. Empty 1 qt of Canned tomatoes, with liquid, on top of shipwreck. Gently mashing and spreading large pieces of tomato with a spoon evenly. Cook in a preheated oven around 2 hours, or until potatoes are tender, or in a slow-cooker on high for around 4 hours, until tender.

I played around with it until I found the one we like best. I then had an idea for another variation, tried it out, and we liked it too (hence the "2-way" part of the title) Give them...

4-6 red potatoes, sliced (peel if desired)
1 lb ground beef
1 tsp salt
1/2 tsp pepper
1 small onion, chopped
1 can(s) 15 oz. red beans, undrained
1 can(s) 15 oz. tomato sauce

Steps:

  • 1. Place sliced potates in bottom of a 13 x 9 x 2 casserole dish.
  • 2. Spread chopped onions over potatoes.
  • 3. Crumble ground beef over onions and potatoes; sprinkle with salt and pepper. (An easiness hint: I actually don't even measure the salt and pepper, but I have a salt shaker that has a mix of 2/3 salt to 1/3 pepper and I just shake it over the whole top)
  • 4. Pour beans on top of beef. (Do NOT drain the beans, this is one of the things that keeps the casserole from being too dry)
  • 5. Pour tomato sauce on top of all.
  • 6. Cover and bake for 1 hour at 350.
  • 7. Note: I usually stir the mixture when it comes out, just to make sure the potatoes are tender.
  • 8. Extra Note (see below for another variation) I call them "Red Shipwreck" or "Green Shipwreck" depending on the beans used :) Here is the other...
  • 9. USE: One 15 oz can of green beans (I think I drained them) in place of red beans. One 10 oz can cream of mushroom soup, thinned with a little milk in place of the tomato soup.
