Categories     Rice Recipes

Time 45m

Number Of Ingredients 10

1 2-inch piece ginger, plus 2 teaspoons minced ginger
4 cloves garlic, plus 2 teaspoons minced garlic
8 ounces shiitake mushrooms, stems and caps separated
12 cilantro stems, plus leaves for serving
Coarse salt and freshly ground pepper
5 tablespoons unsalted butter
1 tablespoon low-sodium soy sauce, plus more for serving
1 1/2 cups arborio rice
1/2 cup dry white wine, such as Sauvignon Blanc
2 cups sugar snap peas (8 ounces), trimmed and sliced

Steps:

  • In a saucepan, bring ginger piece, garlic cloves, mushroom and cilantro stems, 1 tablespoon salt, and 8 cups water to a simmer.
  • In a large straight-sided skillet, heat 2 tablespoons butter over high. Add mushroom caps and a pinch of salt; cook, stirring occasionally, until browned, 5 minutes. Transfer to a bowl; stir in soy sauce. Melt remaining butter in skillet over medium. Add rice and minced ginger and garlic; cook, stirring, until rice is toasted, 3 to 4 minutes. Add wine; cook until evaporated. Add 1/2 cup broth; cook, stirring, until liquid is absorbed. Continue adding broth 1/2 cup at a time, stirring, until rice is al dente, about 25 minutes. Stir in snap peas; cook until tender, about 7 minutes more. Remove from heat and stir in mushroom caps; season with salt and pepper. Serve, with cilantro leaves and a drizzle of soy sauce.

CARAMELIZED SHIITAKE MUSHROOM RISOTTO

Caramelized Shiitake Mushroom Risotto image

Easy-to-make vegan risotto infused with sautéed shallot and caramelized shiitake mushrooms! Hearty, flavorful, and incredibly satisfying.

Provided by Minimalist Baker

Categories     Entree

Time 30m

Number Of Ingredients 12

3 1/2 - 4 cups vegetable broth ((or store-bought))
2 Tbsp avocado or olive oil ((if avoiding oil, sub water))
3/4 cup thinly sliced shallot
1/4 tsp each sea salt and black pepper
2 cups sliced Shiitake mushrooms, hardy / woody stalked removed ((or other similar mushroom))
1 Tbsp coconut aminos ((or tamari // soy sauce))
1 Tbsp chopped fresh thyme ((or sub dried))
1 cup arborio rice ((works best here - we recommend not subbing other grains))
1/4 cup dry white wine ((or omit))
1/4 cup vegan parmesan cheese ((plus more for serving // or sub nutritional yeast))
Fresh chopped parsley
Vegan Parmesan Cheese

Steps:

  • In a medium saucepan, heat vegetable broth over medium heat. Once simmering, reduce heat to low to keep warm.
  • In the meantime, heat a large pan* over medium heat. Once hot, add oil and shallot and season with a pinch of salt and pepper. Sauté for 3-4 minutes - stirring frequently. Then add mushrooms and coconut aminos and continue sautéing until the mushrooms are golden brown and caramelized. Optional: remove some of the shiitake mushrooms from the pan and reserve for serving - not necessary, but it makes a nice garnish.
  • Add the thyme and arborio rice and cook for 1 minute, stirring occasionally. Then add dry white wine and stir gently. Cook for 2 minutes or until the liquid is mostly absorbed.
  • Using a ladle, add warmed vegetable stock 1/2 cup (120 ml) at a time, stirring almost constantly, giving the risotto little breaks to come back to a simmer. The heat should be medium, and there should always be a slight simmer (adjust heat as needed). You want the mixture to be cooking consistently but not boiling or it can get gummy and cook too quickly.
  • Continue to add vegetable stock 1 ladle at a time, stirring to incorporate, until the rice is 'al dente' - cooked through but still has a slight bite. This whole process should take about 15-20 minutes.
  • Once the rice is cooked through and al dente, remove from heat and add vegan parmesan cheese. Stir to coat (see photo). Taste and adjust flavor as needed, adding sea salt and pepper to taste or more vegan parmesan to enhance the cheesiness. If dry at this point, add a little more warmed broth.
  • To serve, divide between serving bowls and top with reserved mushrooms, additional vegan parmesan cheese, and a sprinkle of fresh parsley (all optional).
  • Best when fresh, though leftovers will keep covered in the refrigerator for 4-5 days or in the freezer up to 1 month. Reheat on the stovetop with additional (warmed) vegetable broth until hot.

Pea tendrils
Lobster Oil, for garnish, recipe follows
8 medium lobster carcasses
2 tablespoons plus 1/4 cup olive oil
8 cloves garlic
3 medium onions, chopped
3 medium carrots, peeled and chopped
1 small fennel bulb, cored and chopped
1 (750-ml) bottle white wine

1/2 carrot
1/4 medium onion
1/2 celery stalk
1 teaspoon paprika
2 cups extra-virgin olive oil

Steps:

  • Heat 3 tablespoons oil in a medium saucepan. Add onion and garlic and cook until soft. Stir in Arborio rice to coat, then add wine and cook until reduced. Add stock, 2 cups at a time, for a total of 4 cups, and cook until al dente. If you run out of stock and need to add more liquid, use water. Add kosher salt and freshly ground black pepper, to taste. Transfer risotto to a sheet pan and cool in the refrigerator, if making ahead of time.

  • Preheat oven to 400 degrees F.
  • Place lobster bodies in roasting pan, drizzle with 2 tablespoons olive oil, and roast for 45 minutes or until slightly charred.
  • In a large stockpot, heat 1/4 cup olive oil over medium heat. Add garlic, onions, carrots, and fennel and saute for 5 minutes. Add wine and cook until reduced by half. Add roasted lobster bodies, water, and all remaining ingredients. Simmer for 1 1/2 to 2 hours. Strain and reserve. If making ahead of time, cool stock, and store in an airtight container in the refrigerator for 1 day, or freeze for up to 1 month.
  • Preheat oven to 400 degrees F.
  • Roast lobster bodies for 10 minutes and then transfer to a large saucepan. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 20 minutes. Remove from heat and let cool. Strain and discard solids. Set aside until ready to use. If making oil more than 2 hours ahead of time, store oil in the refrigerator.

SHIITAKE MUSHROOM RISOTTO WITH FRESH PEAS AND MINT

SHIITAKE MUSHROOM RISOTTO WITH FRESH PEAS AND MINT image

Categories     Rice     Side     Low Fat     Vegetarian     Wheat/Gluten-Free

Yield 4-6 servings

Number Of Ingredients 11

15 dried shiitake mushroom caps
3 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 cup short grain Japanese or Arborio rice
4 to 5 cups water or stock, preferably reserved from rehydrating the mushrooms
4 to 8 sprigs of fresh thyme
1 1/2 cups peas, fresh or frozen
1/4 cup grated parmesan, plus extra for garnishing
15-20 mint leaves, sliced thin
salt and pepper to taste

Steps:

  • Prep step: If using dehydrated mushrooms, 20 minutes before you're ready to start cooking the risotto, place the mushroom caps in five cups of water or stock and bring to a boil. Remove from the heat, cover and let steep. Take 15. Remove the rehydrated mushrooms from the liquid and let cool. Place the liquid back on low heat and keep warm. Heat a saute pan over medium high heat. Add the olive oil and saute the onion until translucent, about 5 minutes. Stir in the rice, coating the grains with the oil and cook until the rice turns opaque, about 3 minutes. Stir in the minced garlic and saute until fragrant, about 30 seconds. Add about a cup and a half of the heated liquid to the rice, stirring to de-glaze the pan. Add in a half teaspoon of salt and a few grinds of fresh cracked peppers. Reduce the heat to medium low as the risotto should cook at a low boil until the liquid has evaporated down to the level of the top of the rice. Meanwhile, slice the mushroom caps into thin slices. Add the liquid one cup at a time, allowing the liquid to evaporate/absorb between additions. With the third addition, add the peas and sliced mushrooms. After the liquid has evaporated, taste the risotto to see that it is al dente and if necessary, add additional liquid. After the liquid has evaporated, remove from the heat and stir in 1/4 cup of the grated parmesan and 1/2 of the sliced mint. Serve immediately in a shallow dish, garnish with reserved mint and extra grated parmesan. Voila!

MUSHROOM AND PEA RISOTTO

Mushroom and Pea Risotto image

My very first risotto recipe and I must say, it's pretty legit. Rich and creamy with loads of mushrooms, peas, and cheese. Absolutely delicious and honestly, quite easy to whip up. Serve and garnish with additional grated cheese and chopped parsley.

Provided by Jonathan Charbz

Categories     Risotto

Time 1h

Yield 6

Number Of Ingredients 18

4 cups vegetable broth
4 cups low-sodium vegetable broth
3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter, divided
1 medium yellow onion, minced
4 cloves garlic, crushed and minced
½ teaspoon red pepper flakes
sea salt and cracked black pepper to taste
2 cups cremini mushrooms, sliced
¾ cup shiitake mushrooms, sliced
1 teaspoon chopped fresh thyme
½ teaspoon ground thyme
2 cups Arborio rice
1 large bay leaf
½ cup dry white wine
1 cup frozen peas
1 cup shredded Pecorino Romano cheese
⅓ cup chopped fresh parsley

Steps:

  • Bring regular and low-sodium vegetable broth to a slow boil in a medium pot over medium heat. Reduce heat slightly and keep warm.
  • Heat olive oil and 1 tablespoon butter in a 12-inch skillet over medium heat. Add onion, garlic, pepper flakes, and a pinch of salt and pepper. Cook, stirring often, for 3 to 4 minutes.
  • Add cremini and shiitake mushrooms, fresh and dried thyme, and a generous pinch of salt and pepper. Cook and stir until mushrooms have released their liquid and caramelized a bit, about 5 minutes. Transfer vegetables to a plate and set aside.
  • Add remaining 1 tablespoon butter to the skillet and return to the heat to melt. Add Arborio rice and stir until rice gives off a toasty smell and appears a little paler in color, about 2 minutes. Add bay leaf, pour in wine, and stir until liquid is absorbed, about 3 minutes.
  • Use a ladle to scoop some hot broth into the skillet. Cook and stir until all liquid is absorbed, 2 to 3 minutes, before adding another ladle of broth. Continue this process until risotto is just about finished, about 15 minutes. With the final ladle of broth, add frozen peas and return cooked vegetables to the pan.
  • Remove from the heat once the liquid is absorbed and the rice is tender, yet firm to the bite. Stir in Pecorino Romano cheese and parsley. Taste and adjust salt and pepper if needed.

Tips:

  • Use high-quality ingredients. The better the quality of your ingredients, the better your risotto will be. Look for fresh, flavorful mushrooms, peas, and mint.
  • Toast the rice before adding the liquid. This will help to develop the rice's flavor and prevent it from becoming mushy.
  • Add the liquid gradually. Don't dump all of the liquid into the rice at once. Add it in small increments, stirring constantly, until the rice is cooked through.
  • Be patient. Risotto takes time to cook. Don't rush the process or you'll end up with a mushy mess.
  • Season to taste. Add salt, pepper, and other seasonings to taste. You may also want to add a squeeze of lemon juice or a splash of white wine.

Conclusion:

Shiitake mushroom risotto with fresh peas and mint is a delicious and elegant dish that is perfect for a special occasion. It is easy to make, but it does take some time. So, be patient and enjoy the process. The result will be a creamy, flavorful risotto that you and your guests will love.
