Tips:

  • Choose the right type of sherry: Dry sherry, such as fino or manzanilla, is best for seafood chowder. Avoid sweet sherries, as they will overpower the delicate flavors of the seafood.
  • Use fresh seafood: The fresher the seafood, the better the chowder will be. If you can, use seafood that was caught the same day.
  • Don't overcook the seafood: Seafood cooks quickly, so be careful not to overcook it. Overcooked seafood will be tough and chewy.
  • Add vegetables for flavor and texture: Vegetables such as onions, celery, carrots, and potatoes are all good additions to seafood chowder. They add flavor, texture, and nutrients.
  • Season the chowder to taste: Salt and pepper are the basic seasonings for seafood chowder, but you can also add other spices and herbs to taste. Some popular additions include thyme, bay leaf, and paprika.
