Simmer over medium heat until liquid becomes syrupy, stirring frequently, about 25 minutes. Cool. (Can be made 4 hours ahead. Cover; let stand at room temperature.)
- Transfer pepper mixture to platter. Sprinkle with parsley and serve.
Tips:
- Choose high-quality ingredients: The quality of your ingredients will greatly impact the final dish, so it's important to use the best you can afford. Look for fresh, organic produce, high-quality olive oil, and a good-quality sherry.
- Don't overcrowd the pan: When searing the chicken, make sure to give it enough space in the pan so that it can brown properly. If you overcrowd the pan, the chicken will steam instead of sear.
- Cook the chicken until it's golden brown: Don't be afraid to let the chicken get a good sear before flipping it. This will help to develop flavor and prevent the chicken from drying out.
- Use a good-quality red pepper: The type of red pepper you use will also make a big difference in the flavor of the sauce. Look for a pepper that is firm and has a deep red color.
- Don't overcook the red peppers: The red peppers should be cooked until they are tender, but still have a slight crunch. If you overcook them, they will become mushy.
- Add the sherry and garlic at the end: Adding the sherry and garlic at the end of the cooking process will help to preserve their flavor. If you add them too early, they will cook off and lose their flavor.
Conclusion:
This sherry, red pepper, and toasted garlic pan sauce is a delicious and versatile sauce that can be used to top chicken, fish, or vegetables. It's easy to make and can be tailored to your own personal taste. So next time you're looking for a quick and easy weeknight meal, give this sauce a try!
