1/2 cup chopped jalapeno
2 eggs
1 (12 ounce) can evaporated milk
1 cup flour

The amount of jalapenos used can easily be adjusted to personal taste, although baking does take a lot of the burn out of the peppers. I've made this several times and I never have leftovers. My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

1 pound shredded Cheddar cheese
1 teaspoon minced onion
2 jalapeno peppers, seeded and chopped

Steps:

sliced pickled jalapeno pepper (enough to cover the bottom of a 9-inch square pan)
6 eggs, beaten
2 cups mild cheddar cheese, grated
2 cups sharp cheddar cheese, grated

Steps:

  • Preheat oven to 350 degrees. Line the bottom of a 9-inch square baking pan, lightly coated with cooking spray, with a single layer of pickled jalapeno slices. Beat eggs in a medium bowl. 1 lb sharp cheddar shredded
12 oz sliced jalapenos drained (i get the tamed ones at walmart)
1 can(s) evaporated milk (12 oz.)
1 c self rising flour
2 eggs

Steps:

  • 1. Combine all shredded cheeses in a large bowl. Place half of the cheeses in a sprayed 13x9 pan. Layer jalapenos over cheese mixture and then top with remaining cheeses. Beat flour, eggs and evaporated milk til smooth. Spread over cheese mixture. Bake for 40-45 minutes. Let cool for about 20 minutes before cutting.
  • 2. For variations I have added minced onion,crumbled bacon or ham.
