Yield Makes about 4 cups

Number Of Ingredients 6

1 1/2 cups packed golden brown sugar
1/2 cup cream Sherry
2 tablespoons light corn syrup
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3 cups walnut halves, toasted

Steps:

  • Line 2 cookie sheets with waxed paper. Combine first 5 ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves. Cook without stirring until clip-on candy thermometer registers 240°F., about 10 minutes. Remove from heat. Add nuts and stir until syrup begins to look cloudy, about 2 minutes. Divide mixture between cookie sheets. Working quickly, separate nuts with fork. Cool. (Can be made 1 week ahead. Store airtight at room temperature.)

Tips:

  • Choose Fresh Walnuts: Opt for fresh walnuts with a light brown color and no signs of mold or blemishes.
  • Use Quality Sherry: Select a good-quality dry sherry for the best flavor. Avoid cooking sherry, as it has a high salt content.
  • Roast the Walnuts: Roasting the walnuts enhances their flavor and makes them more crispy. Roast them in a preheated oven at 350°F (175°C) for 8-10 minutes, stirring occasionally.
  • Use a Non-Stick Skillet: To prevent the walnuts from sticking, use a non-stick skillet or add a little butter or oil.
  • Stir Continuously: Keep stirring the walnuts while cooking to ensure even coating and prevent burning.
  • Add Spices and Herbs: You can add various spices and herbs to enhance the flavor of the walnuts, such as cinnamon, nutmeg, ginger, or rosemary.
  • Cool Completely: Allow the walnuts to cool completely before storing them in an airtight container. This will help them retain their crispiness.

Conclusion:

Sherried walnuts are a delightful and versatile snack or addition to various dishes. With their sweet and savory flavor, they are perfect for salads, desserts, or simply as a crunchy treat. By following the tips and recipe variations mentioned above, you can easily create delicious sherried walnuts at home. Remember to experiment with different spices and herbs to find your favorite flavor combination. Enjoy the delightful crunch and unique taste of these glazed walnuts in your culinary creations!
