SHERRIED GREEN BEANS WITH PORTOBELLO MUSHROOMS

Sherried Green Beans With Portobello Mushrooms image

This is one of my favorite vegetable side dishes inspired by a similar dish by Rachel Ray. The sherry is what gives it the unique lip-smacking flavor, so try not to substitute anything for it.

Yield 8 servings (each 1 c)

Number Of Ingredients 9

1 1/2 lbs. haricots verts, trimmed
3 tablespoons butter, divided
1/3 c. thinly sliced shallots
3/4 pound exotic mushroom blend, coarsely chopped
1/4 c. dry sherry
3 tablespoons chopped fresh flat-leaf parsley
2 teaspoons chopped fresh thyme
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • 1. Steam haricots verts 5 minutes or until crisp-tender; remove from heat. 2. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add shallots to pan; saute 3 minutes, stirring occasionally. Add mushrooms; saute 5 minutes or until liquid evaporates. Stir in sherry; bring to a boil. Cook until liquid almost evaporates (about 2 minutes). Add remaining 1 tablespoon butter and haricots verts; cook 30 seconds or until thoroughly heated, tossing to coat. Remove from heat. Add parsley, thyme, salt, and pepper; toss to combine.

Tips:

  • Use fresh mushrooms. Fresh mushrooms will have a better flavor and texture than canned or frozen mushrooms.
  • Clean the mushrooms properly. Use a damp cloth to wipe the mushrooms clean. Do not wash them with water, as this can make them soggy.
  • Slice the mushrooms evenly. This will help them to cook evenly.
  • Use a variety of mushrooms. This will add different flavors and textures to the dish.
  • Use a good quality sherry. A good quality sherry will add a rich flavor to the dish.
  • Don't overcook the mushrooms. Overcooked mushrooms will be tough and rubbery.
  • Serve the mushrooms immediately. Sherried mushrooms are best served immediately after they are cooked.

Conclusion:

Sherried mushrooms are a delicious and versatile dish that can be served as an appetizer, side dish, or main course. They are easy to make and can be tailored to your own taste. With a few simple tips, you can make perfect sherried mushrooms every time.
