2 cups cream sherry
1/4 cup butter, cubed
1 pound assorted fresh mushrooms (such as shiitake, cremini and oyster)
8 shallots, finely chopped
1/3 cup minced fresh parsley
1 tablespoon lemon juice
1/3 cup all-purpose flour
4 cups beef broth
1 round (8 ounces) Brie cheese, rind removed, cubed
1 cup heavy whipping cream
1 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • Place sherry in a small saucepan. Bring to a boil; cook until reduced by half. Set aside., In a Dutch oven, melt butter. Add mushrooms and shallots; saute until tender. Add parsley and lemon juice. Stir in flour until blended; gradually add broth and reduced sherry., Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened. 4 tablespoons butter
1 onion (diced)
1 lb. cremini mushrooms (sliced or chopped (baby portobellos))
1/4 cup all-purpose flour
4 cups chicken stock/broth (or vegetable or mushroom broth)
8 oz. brie (rinds removed and cut into small wedges or cubes*)
1 cup heavy cream
kosher salt (to taste)
black pepper (to taste)
croutons and/or parsley (for garnish (if desired))

Steps:

  • Melt the butter (4 tablespoons) in a medium or large pot over medium high heat. Once it's melted, continue heating until foamy and beginning to turn brown.
  • Immediately add the diced onion and mushrooms. Season with salt and pepper. Stir, turn heat down to medium, then allow to sauté untouched for approximately 5 minutes, or until liquid has mostly evaporated.
  • Add flour (1/4 cup); stir to coat.
  • Add chicken broth (4 cups), stir, bring to a boil.
  • Turn heat down to simmer. Add cubed brie (8 oz.) and continue simmering until melted (if there are a few chunks that won't melt, don't worry about it).
  • Use an immersion blender to puree the soup to desired consistency (alternatively, you can use a standard blender in batches).
  • Add the heavy cream (1 cup) to soup and stir in. Turn off heat, and taste and adjust seasonings if necessary.

1 cup boiling water
2 tablespoons butter
1/2 cup finely chopped onion
4 garlic cloves, thinly sliced
6 ounces fresh Shiitake mushrooms, stemmed, caps sliced
1/2 cup dry Sherry, plus additional for garnish
4 cups chicken stock or vegetable stock
4 ounces Enoki mushrooms, trimmed
Chopped epazote, oregano or chives

Steps:

  • Place Porcini in medium bowl. Pour boiling water over. Let stand until softened, about 30 minutes. Drain, reserving soaking liquid. Strain soaking liquid through cheesecloth to remove any dirt. Coarsely chop Porcini.
  • Melt butter in heavy large saucepan over medium high heat. Add onion and saute until tender, about 5 minutes. Add garlic, Shiitake and Porcini and saute until mushrooms are tender, about 5 minutes. Add Sherry and boil until almost all liquid evaporates. Add reserved soaking liquid and stock. Simmer soup 15 minutes to blend flavors. Add Enoki mushrooms and stir until heated through. Season to taste with salt and pepper. Ladle soup into bowls. Drizzle with additional Sherry and garnish with epazote, oregano or chives.

2 parts granulated garlic
1 part dry whole thyme
1 part paprika
1/2 part ground black pepper
2 cups butter
1 cup diced onions
1/2 cup chopped garlic
3 pounds mushrooms, sliced
3 tablespoons Chaps seasoning blend
2 cups red wine
3 cups fresh chicken stock
4 cups heavy cream
3 cups half-and-half
2 cups shredded Brie cheese
2 cups shredded pepper jack cheese
Salt and freshly ground black pepper

Steps:

  • Combine all of the seasoning ingredients in a small bowl.
  • Melt the butter in soup pot over medium-low heat. Add the onions and garlic and cook until soft. Stir in the sliced mushrooms and saute until the mushrooms are soft and reduced in size. 1 ounce dried porcini mushrooms (about 1 cup, approximately)
2 cups boiling water
4 ounces fresh white mushrooms or fresh shiitakes, cleaned
1 quart chicken or vegetable stock
2 large garlic cloves, sliced thin
1 (14-ounce) can tomatoes, drained and chopped
Salt and freshly ground pepper
A few drops fresh lemon juice
1 tablespoon chopped fresh chives
4 to 8 thin slices baguette, toasted and rubbed with a cut clove or garlic
2 tablespoons freshly grated Parmesan

Steps:

  • Place the dried porcinis in a bowl or a pyrex measuring cup and cover with 2 cups boiling water. Let sit for 30 minutes. Meanwhile, wipe the fresh mushrooms, trim away the bottoms if they're sandy, break off the stems and set them aside. Set aside the caps in a separate bowl.
  • Drain the porcinis through a cheesecloth-lined strainer set over a bowl. Squeeze over the strainer to extract as much flavorful liquid as possible and set aside the broth. Rinse the mushrooms in several changes of water. Measure the mushroom soaking water and add water to make 2 cups.
  • In a soup pot or a large saucepan, combine the mushroom soaking liquid, the chicken or vegetable stock, the soaked porcinis, fresh mushroom stems, garlic, tomatoes, and 1 teaspoon salt, and bring to a simmer. Cover and simmer over very low heat for 1 hour. Strain the soup and return to the saucepan. Add salt and freshly ground pepper to taste.
  • Slice the fresh mushroom caps paper-thin, toss with a couple of drops of lemon juice, and add to the soup pot. Heat through for 5 minutes.
  • If garnishing with the garlic croutons, top them with Parmesan and place in a hot oven or toaster until the Parmesan has melted. Ladle the soup into bowls and garnish each bowl with chopped fresh chives and a crouton or two if desired.

3 cups sliced crimini mushrooms (about 6 ounces)
3 cups sliced oyster mushrooms (about 4 1/2 ounces)
1/2 cup dry white wine
1/2 cup dry Sherry
1/4 cup all purpose flour
8 cups chicken stock or canned low-salt chicken broth
1/2 cup whipping cream

Steps:

  • Melt 6 tablespoons butter in large pot over medium-high heat. Add celery, shallots, onion and garlic and sauté until onion is translucent, about 8 minutes. Add all mushrooms and sauté until beginning to soften, about 4 minutes. Add white wine and Sherry. Boil until liquid is reduced to glaze, about 6 minutes.
  • Mix remaining 2 tablespoons butter and 1/4 cup flour in small bowl until smooth paste forms. Add flour paste to mushroom mixture in pot; stir until mixture melts and coats vegetables. Gradually mix in stock. Bring to boil, stirring frequently. Reduce heat to medium-low and simmer until mushrooms are tender, stirring often, about 10 minutes. Stir in cream. Season with salt and pepper.
  • Working in batches, puree soup in blender or processor until smooth. Return soup to pot. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium-low heat before serving.) Ladle soup into bowls and serve.
