One-Pot Crispy Chicken and Rice image

This meal is so comforting and family friendly. My kids eat every morsel on their plates. This is also a super economical way to feed a family or a large crowd. Great served with green beans, broccoli, or a salad.

Yield 6

Number Of Ingredients 11

1 tablespoon olive oil
6 (4 ounce) bone-in, skin-on chicken thighs
1 ½ teaspoons kosher salt, divided
¾ teaspoon ground black pepper
1 tablespoon unsalted butter
⅔ cup finely chopped yellow onion
2 cloves garlic, minced
1 ½ cups uncooked long-grain rice
3 cups chicken stock, divided, or more to taste
1 tablespoon finely chopped flat-leaf parsley
1 medium lemon, cut into wedges

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat oil in large Dutch oven over medium-high heat. Sprinkle chicken thighs evenly with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Place chicken skin-side down in the Dutch oven; cook undisturbed until golden crisp and easily released from the bottom, about 5 minutes. Flip chicken and cook for 3 minutes more. Transfer to a plate and set aside. Chicken will not be cooked through at this point.
  • Add butter to the drippings and melt. Add onion and cook, stirring often, until translucent, about 3 minutes. Add garlic; cook for 1 minute. Add rice; cook, stirring to coat grains in drippings and lightly toast, about 1 minute. Stir in 3 cups stock and remaining salt and pepper. Bring to a boil. Use a wooden spoon to scrape any browned bits from the bottom of the Dutch oven. Place the chicken thighs over the rice.
  • Bake in the preheated oven until all liquid has been absorbed and chicken is cooked through, 45 to 55 minutes. Add remaining stock if liquid is absorbed before rice and chicken are cooked through. Sprinkle with parsley and squeeze lemon juice over the top.

SHENANDOAH CHICKEN

Shenandoah Chicken image

This is a spicy sweet and sour chicken dish. The spicy being the addition of Creole seasoning. I love the extra spice....if you get it right, it will sneak up on you in a good way. It's an entree I had at this now closed restaurant in Northern Virginia. It was served on a cast iron skillet with Jasmine rice. My mom and I set out to recreate it and are pleased with the results. I am still searching for the best sweet and sour sauce recipe to make it perfect.

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 9

2 1/2 lbs chicken breasts, cut into 1-inch cubes
1 green bell pepper, cut into 1-inch squares
1 red bell pepper, cut into 1-inch squares
1 yellow bell pepper, cut into 1-inch squares
2 medium onions, cut into 1-inch squares
3 tablespoons vegetable oil
1 tablespoon creole seasoning (or Cajun, more or less, see note below)
3/4-1 cup sweet and sour sauce (bottled or homemade)
rice, for serving over

Steps:

  • Heat a large skillet to medium high and add half of oil.
  • Saute peppers and onions until tender crisp. I like mine to slightly caramelize on the edges. Remove and set aside.
  • Add rest of oil to skillet and add chicken, sprinkle with Creole seasoning.
  • Note: The amount of seasoning you use is going to depend on the heat level of the spice blend you have and how hot you like it. I season the chicken until it is slightly more spicy than I like it because the sweet and sour sauce along with the pepper/onion mixture greatly cuts the spice. But by all means, go conservative, you can always add more later.
  • Brown the chicken until cook and no longer pink.
  • Add the peppers and onions back in and then the sauce.
  • Cook until sauce is heated through.
  • Taste and add more Creole seasoning if necessary.

EASY CHICKEN WITH RICE

Easy Chicken With Rice image

You can make a big deal out of chicken with rice -- at its zenith, it becomes paella -- but it is a dish that takes well to short cuts. And even at its simplest, it's a crowd-pleaser. For fast weeknight meals, I strip chicken and rice to its essentials: oil, onion, chicken and rice. Stock makes the best cooking liquid, but water works almost as well, because as it simmers with the chicken they combine to produce a flavorful broth. To reduce greasiness, I remove the skin from the chicken before cooking it. (In a moist dish like this one, the skin is not especially appetizing anyway.) You can easily vary this dish by using any stock instead of water; by substituting another grain, like pearled barley, for the rice; by sautéing or roasting the chicken separately and combining it with the rice at the last minute; by adding sausage or shellfish, like shrimp, along with the chicken, or, most excitingly, by adding strips of red pepper, pitted olives, capers, chopped tomatoes or shelled peas to the initial onion mix.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 8

3 tablespoons olive oil
2 medium onions, about 8 ounces, peeled and sliced
Salt and freshly ground black pepper
1 chicken, cut up into serving pieces
1 1/2 cups white rice
Pinch saffron, optional
Freshly minced parsley or cilantro for garnish
Lemon or lime wedges

Steps:

  • Set 3 cups of water to boil. Place olive oil in a large skillet that can be covered, and turn heat to medium-high. Add onions and a sprinkling of salt and pepper. Cook, stirring occasionally, until onions soften and become translucent, 5 to 10 minutes. Remove skin from chicken.
  • Add rice to onions; stir until each grain glistens; sprinkle with saffron, and stir. Nestle chicken in rice, add a little more salt and pepper and pour in the boiling water. Turn heat to medium-low, and cover.
  • Cook 20 minutes, until all water is absorbed and chicken is cooked through. (You can keep this warm over a very low flame for another 15 minutes; it will retain its heat for 15 minutes beyond that.) Garnish and serve with lemon or lime.

SHENANDOAH CHICKEN WITH RICE

Shenandoah Chicken With Rice image

Shenandoah Chicken with Rice was a pure comfort food as my children were growing up. My husband was in the Military and that means having to stretch a buck at every turn. This dish is tender, creamy, delicious, and not expensive to make. My grown-up kids and grandkids still ask for it!

Time 35m

Number Of Ingredients 11

2 whole chicken breasts, cut into bite sized pieces
1 c white rice
2 c chicken stock
2 small tomatoes (or 1 very large), cut into thin wedges
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 large onion, chopped
1 pt heavy cream
2 medium cloves of garlic chopped,or 1/2 tsp. garlic powder
1/2 tsp salt and pepper
2 Tbsp oil

Steps:

  • 1. Cook rice according to package diections, using 2 cups of stock instead of water. In a large non-stick frypan, lightly saute' chicken, onion, peppers, & garlic in 2T. of your favorite oil. You want these veggies to be crisp-tender, so don't cook too long...3-5 minutes on medium high heat. Set off the heat. When the rice is done, add it to the chicken and veggies, and at that time, add the tomatoes. Stir, over medium heat, approximately 5-7 minutes, adding the cream at little at a time, to make the dish creamy. Be careful not to use too much as, you don't want it to become gooey. (You may have as much as half of it left over...depending on the consistency of the rice.) Taste for salt and pepper and add that near the end of cooking time. Enjoy!!
  • 2. I serve this with sauteed lemony asperagus, and crusty bread.

RANCH CHICKEN SANDWICHES

Time 2h30m

Yield 8 servings

Number Of Ingredients 11

4 whole boneless, skinless chicken breasts
1/2 cup honey
1/2 cup Dijon mustard (or country/grainy mustard)
1 teaspoon paprika
1/2 teaspoon salt
Freshly ground black pepper
Juice of 1 lemon
Crushed red pepper, for sprinkling, optional
1 pound thick-cut bacon, sliced in half
2 cups grated sharp Cheddar
8 soft whole grain buns

Steps:

  • With a very sharp knife, cut the chicken breasts in half down the middle. This will result in 8 chicken breast pieces that are thinner and uniform in size.
  • Next, make the marinade. In a large bowl mix together the honey, mustard, paprika, salt, pepper to taste, lemon juice and crushed red pepper flakes if using. Stir to combine.
  • Add the chicken to the marinade and toss to coat. Cover the bowl with plastic wrap and marinate in the fridge, 2 to 4 hours.
  • While the chicken marinates, fry up the bacon until chewy. When finished cooking, reserve 1/4 cup of the bacon grease and pour off the rest of the grease (but do not clean the skillet).
  • When you are ready to cook the chicken, remove it from the marinade and cook it in the skillet over medium-high heat, 3 to 4 minutes each side. Brush a little reserved bacon grease on the chicken as you cook it. (Or you can grill the chicken breasts on an indoor or outdoor grill.)
  • When a couple of minutes grilling time are left, lay 2 pieces of bacon onto each chicken breast. Top with some Cheddar and allow it to melt on the grill (if you need to remove the chicken you can finish melting the cheese under the broiler).
  • Halve the rolls and immediately load with the bacon-and-cheese covered chicken.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid scrambling.
  • Use good quality ingredients: The better the ingredients you use, the better your dish will taste. Look for fresh, organic produce and high-quality meat and poultry.
  • Don't overcrowd the pan: When searing chicken or other meats, make sure you don't overcrowd the pan. This will prevent the meat from cooking evenly and will make it more likely to stick.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute heat evenly and prevent food from burning.
  • Season your food well: Don't be afraid to season your food liberally. Salt and pepper are essential, but you can also use other herbs and spices to add flavor.
  • Cook the rice according to the package directions: Rice is a staple ingredient in many Shenandoah chicken recipes. Make sure you cook it according to the package directions to ensure that it is cooked properly.
  • Serve immediately: Shenandoah chicken is best served immediately after it is cooked. This will help to preserve the flavors and textures of the dish.

Conclusion:

Shenandoah chicken is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover chicken, and it can be easily customized to suit your own taste preferences. Whether you serve it with rice, noodles, or vegetables, Shenandoah chicken is sure to be a hit at your next meal.
