2 pounds Brussels Sprouts
1 Tablespoon butter
2 Tablespoons flour
1 ½ cups milk
½ cup shredded Mozzarella cheese
½ cup shredded Pepper Jack cheese
1 teaspoon salt
1 teaspoon pepper
10 strips bacon (cooked and crumbled)

Steps:

  • Cut off the stem of the brussels sprouts and remove any yellow leaves. Chop brussels sprouts in half length wise.
  • Bring a pot of water to a boil and boil brussels sprouts for about 5 minutes or until tender. Drain and rinse brussels sprouts in cold water so the cooking stops. Set aside.
  • In a pan over medium heat melt butter. Add in flour and whisk to make roux. (If you are using uncooked bacon, you can substitute the butter for the leftover bacon grease in the pan).
  • Add milk and whisk until completely incorporated. Cook on medium heat, stirring, until mixture thickens.
  • Remove from heat and stir in cheeses, salt, and pepper until cheese is completely melted.
  • Add Brussels sprouts and crumbled bacon to cheese sauce and mix until combined.
  • Move Brussels sprouts to a small 8 x 8 inch pan and top with more Mozzarella cheese.
  • Heat oven to 350 degrees F. Bake for 25 minutes or until cheese begins to golden on top.

I have to take one or the other every (Canadian) Thanksgiving, when we go to my son's for dinner. Even people who don't like sprouts, like these....I hope you try them. 4 cups fresh Brussels sprouts
1/2 cup chopped onion
2 tablespoons butter
1 tablespoon flour
1 tablespoon brown sugar
1/2 teaspoon salt

1 cup sour cream
1 tablespoon parsley

Steps:

  • Wash and trim brussels sprouts.

2 tablespoons butter
2 tablespoons all-purpose flour

3 tablespoons dry sherry
1 tablespoon soy sauce (low-sodium if desired)
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
3 tablespoons peanut or canola oil
1/3 cup thinly sliced shallot
1 tablespoon minced garlic
1/4 cup roasted pine nuts

Steps:

  • Trim the ends off the brussels sprouts and remove and discard any discolored outer leaves. Shave a scant 1/4-inch-thick slice off one side of each sprout and put cut side down. Cut scant 1/4-inch-thick slices to make about 6 cups. Transfer the brussels sprouts to the colander of a salad spinner and rinse under cold water. Put the colander into the salad spinner and spin to remove excess water. Combine the sherry and soy sauce in a cup. Combine the salt and pepper in a small dish.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan, then add the shallots and garlic and stir-fry no more than 10 seconds, until the aromatics are fragrant. Add the brussels sprouts, sprinkle with the salt mixture and stir-fry for 1 minute, just until the brussels sprouts are bright green. Swirl the sherry mixture into the wok, cover and cook 1 minute, until almost all the liquid has evaporated. Uncover and stir-fry for 2 minutes, until the Brussels sprouts are crisp-tender and the liquid has just evaporated. Sprinkle with the pine nuts.

1 tablespoon salt
1 pound Brussels sprouts, trimmed and halved lengthwise
2 tablespoons olive oil
sea salt and freshly ground black pepper to taste
4 slices bacon, chopped
1 shallot, chopped
7 cremini mushrooms, chopped, or more to taste
1 clove garlic, minced
¼ cup cream sherry
½ cup heavy cream

Steps:

  • Dissolve 1 tablespoon of salt in enough water to cover the Brussels sprouts in a bowl, and soak the sprouts in the salty water for 1 hour. Drain off the water, and toss the sprouts in olive oil, sea salt, and black pepper to coat thoroughly.
  • Preheat oven to 475 degrees F (245 degrees C).
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, stirring occasionally, until just beginning to brown at the edges, 5 to 8 minutes. Reduce heat to medium; stir in the shallot and mushrooms, then cook until the shallots turn translucent, about 5 more minutes. Sprinkle in the garlic, and cook 1 minute, then stir in the sherry and cream until well combined. Bring the mixture to a boil, and stir until reduced by half. The thickened sauce should coat the back of a spoon.
  • While the sauce is cooking, lay the Brussels sprouts, cut sides down, onto a baking sheet, and bake in the preheated oven until the sprouts are browned, about 15 minutes. Transfer the browned sprouts to the sauce, toss to coat, and season to taste with salt and black pepper.
