GRILLED LAMB CHOPS WITH PINK PEPPERCORN SAUCE
The secret to these extra-flavorful lamb chops is the marinade. (It's also amazing on pork chops.) Have your butcher double-cut the lamb chops-a thicker chop stays super juicy and is easier to keep from overcooking.

Steps:
- Make the marinade for the lamb chops: Combine the oil, mustard, soy sauce, Worcestershire sauce, parsley, rosemary and garlic in a medium bowl. Place the lamb chops in a baking dish or large resealable plastic bag. Pour the marinade over the meat, turning to coat. Cover or seal. Marinate the lamb chops for at least 1 hour at room temperature or up to 8 hours in the refrigerator.
- Place a grill pan over medium heat until hot. Remove the lamb chops from the marinade. Sprinkle lightly with salt and pepper. Grill until an instant-read thermometer inserted in the thickest part (avoiding bone) registers 135 degrees F for medium-rare, 6 to 8 minutes per side. Remove the lamb chops from the grill and let rest 15 minutes before serving.
- Meanwhile, make the pink peppercorn sauce: Melt the butter in a medium saucepan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Slowly pour in the brandy. (If using a gas cooktop, to avoid flare-ups from the alcohol, remove the pan from the heat before adding the brandy.) Cook until the alcohol cooks off, 1 to 2 minutes, stirring the bottom of the pan to loosen any browned bits. Slowly whisk in the heavy cream and peppercorns. Simmer, stirring frequently, until the sauce reduces by half, about 5 minutes. Season with salt.
- To serve, arrange the lamb chops on a platter. Garnish with parsley and rosemary and serve with the pink peppercorn sauce.
LEMON-PEPPER LAMB CHOPS
I got this recipe from Cooking Pleasures magazine. I've never made lamb before this, and let me tell ya - I'm hooked. This recipe is so savory yet so easy to make! I serve this with roasted red potatoes (done with onion soup mix and dill) and my homeade Tzasiki Sauce (#291455).

Steps:
- For the lamb: In a food processor, pulse thyme, oregano, parsley, cilantro and garlic cloves until finely chopped. Transfer to a large bowl, and whisk in wine and olive oil. Add chops and turn until thoroughly coated. Cover and refrigerate overnight.
- For the sauce: Place a cast-iron or nonstick skillet over medium-high heat. Place chilies in pan and turn until they are puffed and toasted; do not allow to burn or they will be bitter. Transfer to a medium saucepan. Toss 3 garlic cloves in skillet until lightly charred on all sides, then add to saucepan. Add onion to skillet, again toss until lightly charred, then add to saucepan. Add whole tomato to skillet, char until skin blisters and add to saucepan, along with stock. Bring to a boil, simmer for 5 minutes and allow to cool for 20 minutes. Pour sauce through a fine-mesh strainer into a bowl, reserving solids.
- Remove chilies from strainer and discard any stems and seeds they contain. Place peppers in a food processor or blender with the rest of the reserved solids. Purée, adding just enough liquid to make a thick paste. In a small saucepan, heat 1 tablespoon olive oil until sizzling, then add chili paste. Stir for 1 minute, then gradually add reserved liquid (watch out for spattering) until it forms a thin sauce. Simmer 5 minutes. Season with salt and pepper to taste.
- For the beans: In a large skillet over medium heat, heat olive oil until shimmering. Add red onion, garlic and jalapeño, and sauté until lightly browned. Add beans and toss until heated through. Season with salt and pepper to taste. Cover and keep warm.
- To finish and serve: Prepare a grill or place a large skillet over medium-high heat. Remove chops from marinade, season with salt and pepper to taste, and cook on each side until medium-rare. Spoon sauce in a large circle on each of four plates, top with a serving of beans and arrange chops around the beans.
PEPPERED LAMB CHOPS
This is a very easy yet yummy lamb chop recipe, I used french trimmed lamb chops but any cut of chop would work just as well with this recipe. I served mine over creamy polenta topped with mushrooms and sprinkled with a few fresh chopped chives. I just saw kiwidutch's review PLEASE NOTE: I used a mild creamy french mustard not dijon that would be way too overpowering if you added 2 Tablespoons. Thanks Kiwidutch for pointing that out I should have made it more clear sorry if you almost blew your head off.

Steps:
- Season chops with black pepper both sides about 3/4 Tablespoon (If you don't use quite 3/4 tablespoon, reserve whatever is left over for the sauce.) reserve remaining tablespoon for the sauce.
- Cook chops either under the grill, BBQ or pan fry until desired doneness.
- For The Sauce.
- In a pan add milk, mustard, brandy, Worcestershire sauce and remaining pepper, bring to boil and then reduce to a simmer for a couple of minutes, add cream, heat through and serve over chops.
- Note: I find the sauce thickens up enough this way, I have had a couple of times where I found it a little to0 runny, if this is the case just use a little cornflour to thicken.
- Serve sauce over chops and sprinkle with chopped chives.

Steps:
- Trim as much fat as possible off the lamb chops. If there is meat on the loose ends of the chops, roll them up and secure to the eye of the chop with a toothpick. Otherwise cut these tails off. Dust chops lightly with flour seasoned with salt and pepper
- Heat olive oil in a heavy skillet large enough to hold the chops in a single layer. Over high heat lightly and quickly brown the chops on both sides. Remove them and cover to keep warm.
- Lower heat to medium, add the pepper and onions and saute until tender. Add the garlic and saute for another minute or two but do not allow the garlic to brown. Stir in the sherry, tomatoes and lemon juice. Bring to a simmer. Season to taste with salt and pepper.
- Return chops to the pan and cook over medium heat, basting constantly with the sauce, until cooked as desired. For medium-rare chops, the cooking time is no more than about three minutes. The tops will be medium in about five minutes and well done in seven to eight minutes. For well-done chops the pan should be covered so too much of the sauce does not evaporate.
- Sprinkle with parsley and olives, garnish with lemon wedges and serve.

Tips:
- To ensure the lamb chops are cooked evenly, use a meat thermometer to check the internal temperature. The chops should reach an internal temperature of 145°F (63°C) for medium-rare, 155°F (68°C) for medium, and 165°F (74°C) for well-done.
- If you don't have a meat thermometer, you can check the doneness of the lamb chops by pressing on them gently with your finger. If the chops are springy to the touch, they are medium-rare. If they are slightly firmer, they are medium. If they are firm to the touch, they are well-done.
- To keep the lamb chops moist and juicy, marinate them for at least 30 minutes before cooking. You can use a variety of marinades, such as olive oil, lemon juice, garlic, and herbs.
- When cooking the lamb chops, sear them over high heat for a few minutes per side to create a nice crust. Then, reduce the heat to medium and cook the chops until they reach your desired doneness.
- Serve the lamb chops immediately with your favorite sides, such as roasted vegetables, mashed potatoes, or a salad.
Conclusion:
Sheila's Peppered Lamb Chops are a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The lamb chops are marinated in a flavorful mixture of peppercorns, garlic, and olive oil, then grilled to perfection. The result is a juicy, tender, and flavorful dish that is sure to please everyone at the table.
