4 Yukon Gold potatoes, cut into wedges
2 tablespoons olive oil
1 teaspoon seasoned salt
1 (10 ounce) package frozen corn
1 small onion, chopped
2 tablespoons salted butter, melted
1 serving cooking spray
4 thinly sliced chicken breasts
1 pinch salt and ground black pepper to taste
¼ cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 cup seasoned bread crumbs

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Add potatoes, olive oil, and seasoned salt to a resealable plastic bag. Seal and toss to coat. Arrange potatoes on one third of a sheet pan.

Tips:

  • Choose the right chicken: For best results, use boneless, skinless chicken breasts or thighs. These cuts are lean and cook quickly, making them ideal for a sheet pan meal.
  • Marinate the chicken: Marinating the chicken in the honey mustard sauce before cooking helps to infuse it with flavor and keep it moist. You can marinate the chicken for as little as 30 minutes or up to overnight.
  • Use a variety of vegetables: This recipe is a great way to use up any vegetables you have on hand. Some good choices include broccoli, carrots, potatoes, and Brussels sprouts.
  • Roast the chicken and vegetables together: Roasting the chicken and vegetables together saves time and effort, and it also helps to create a flavorful and cohesive dish.
  • Don't overcrowd the pan: Make sure to leave enough space between the chicken and vegetables so that they can cook evenly.
  • Serve immediately: Sheet pan honey mustard chicken is best served immediately after cooking, while the chicken is still hot and juicy.

Conclusion:

Sheet pan honey mustard chicken is an easy and delicious weeknight meal that is perfect for busy families. It is also a great way to get your kids to eat their vegetables. With a little planning, you can have a healthy and flavorful meal on the table in no time.
