I ate the most incredible macaroni and cheese with ham that my wife brought home from some fancy restaurant in town known for their Mac n Cheese. (It was packaged in aluminum foil which was formed to look like a swan - I don't even WANT to know how much she paid for this dish!) ANYway - Since Kraft doesn't make this in a box, I thought I'd try out my hand (and whisk) at making it from scratch. Below is the result of many trials (and a few errors...) on my journey to Mac 'n Cheese perfection. I hope you enjoy this as much as my family. There are some recommendations at the bottom regarding different substitutions... I'd appreciate any feedback!

2 cups elbow macaroni
1 cup cooked cubed ham
1 1/2 tablespoons butter or 1 1/2 tablespoons margarine
1 1/2 tablespoons flour
1 cup milk
1/8 teaspoon salt
8 ounces sharp white cheddar cheese (grated)
pepper, to taste

Steps:

  • Begin the cooking process of the macaroni- according to package directions; Add cubed ham (to warm) during the final minute or so of cooking the macaroni; Drain and set aside.
  • While water is heating and macaroni is cooking, make your White Sauce: Melt butter in a saucepan over medium-low heat; add Flour and Salt, and cook about 1 minute, stirring constantly with a wire whisk until mixture is smooth and bubbly.
  • Stir the Milk into the mixture and bring to a boil.
  • Stirring constantly, boil mixture for 1 minute.
  • Lower heat and cook until thickened, stirring regularly about 4-6 minutes.
  • (Don't forget to add the ham to the macaroni as it is cooking!).
  • Remove White Sauce from heat; Add cheese; stir until melted; Pepper to taste.
  • Combine cheese sauce with the macaroni and ham in a bowl (or the macaroni pot); stir well.
  • Serve with a yummy green vegetable on the side like green beans or asparagus.

  • CHEF'S NOTES: You may use Medium/Mild Cheddar or maybe even PepperJack with this recipe as well; I would add a little"kick" with the milder cheeses by adding a clove of minced garlic, or by using salami pieces instead of ham- Yum!

CHEDDAR CHEESE BASE
1 lb sharp cheddar, very finely grated
3/4 c half and half
1 1/2 tsp kosher salt
1/4 tsp cayenne pepper or ground white pepper
PORT WINE SWIRL
1/2 c your favorite, sweet, port wine
1 pkg knox unflavored gelatine
1/4 c parmesan cheese, finely grated

Steps:

  • 1. Using room temperature wine, place in small bowl and add gelatine; mix well. Add parmesan cheese and dissolve by stirring constantly with a small whisk. Set aside and let gelatine form.
  • 2. Heat half & half in a saucepan until bubbles form around edge of pan; do not boil.
  • 3. Place grated cheddar in food processor. Slowly add half & half and mix until cheese is smooth and silky. Add salt and pepper.
  • 4. In a serving bowl, place 1/3 of the cheese mixture on the bottom. Dollop 1/3 of the port wine "jelly" on to the cheese. Using a chopstick, "marble" the port, but not mixing completely with the cheddar. Repeat this step two more times. Remember, the last time you do this step is your "presentation". Swirl carefully!
  • 5. Chill for at least 6 hours so the flavors can marry. When ready to serve, let come up to [nearly] room temperature. Enjoy!

1/2 stick (1/4 cup unsalted butter)
1 medium yellow onion (diced (2 cups))
1 medium carrot (diced small (1/2 cup))
1/2 celery stalk (diced small (1/4 cup))
2 medium garlic cloves (minced (2 teaspoons))
2 teaspoons finely chopped fresh sage (4-5 medium leaves - or 1/2 teapoon dried)
1 bay leaf
1/3 cup all-purpose flour
2 cups whole milk
2 cups vegetable broth
1 12-oz bottle pumpkin ale (I use Blue Moon Harvest Pumpkin Ale)
1 cup pumpkin puree
1/8 teaspoon smoked paprika
1 teaspoon coarse salt like kosher salt (can use table salt, but I suggest about 1/2 teaspoon to start as it's a little harsher)
1/4 teaspoon black pepper
3 cups shredded sharp cheddar cheese (about 3/4 pound)
1 cup shredded Gruyere cheese (about 1/4 pound)
Pinch or two of ground nutmeg (to taste (I add about 1/8 teaspoon))
Kosher salt and freshly ground black pepper (to taste)

Steps:

  • Melt butter to a four-quart or larger saucepan over medium-low heat. Add onion, carrot, and celery and cook, stirring occasionally, until onion is soft, about 5 minutes. Add the garlic, sage, and bay leaf. Saute, stirring frequently, for another minute.
  • Add the flour and continue cooking over medium low heat, stirring frequently, for 3 minutes.
  • Add the milk, vegetable broth, and beer in a stream, whisking well. Return to a simmer and cook for about five more minutes until very slightly thickened.
  • Stir in the pumpkin, smoked paprika, salt, and pepper.
  • Add handfuls of cheese, stirring constantly. Cook until cheese melts, about 3 minutes. Remove bay leaf and serve.

On a lightly floured work surface, roll the dough very thin, about an eighth of an inch thick. Use a round cookie cutter to cut out the crackers. If you like them square, you can just use a knife and cut the dough into squares. Dot center of cracker with a fork so that it cooks evenly. Place crackers on prepared baking sheets. The pieces can be close together as they won't expand much when baking. Bake for 13 to 15 minutes until fragrant, golden brown, and crisp. Allow to cool before serving.
