I have been making this pie every St Patricks Day since 1995. This pie is green, and with the white meringue topping looks scumpcious. It goes so well with your corn beef and cabbage, and Irish soda bread, a great finish to a special meal.Comes from Taste of Home.

SHAMROCK PIE

Here is another goodie I make when I'm in a hurry. You can change the colors up. I sprinkle about 1 cup of coconut on top that I've dyed with green food coloring. I've done red for Christmas. It's fun. Use your imagination. ;)

Provided by Jill Cooks

Categories     Pies

Number Of Ingredients 6

8 oz. tub sour cream
8 oz. cool whip
8 oz. package cream cheese, softened
1/2 cup sugar
2 drops green food coloring
1 chocolate graham cracker crust

Steps:

  • 1. Beat together sour cream, cream cheese, sugar and food coloring. Fold in cool whip. Pour into crust and refrigerate overnight. Top with additional cool whip, if desired and put some maraschino cherries on top. (I like to cut mine in half). Don't forget the coconut.

Tips:

  • Use unsalted butter to control the amount of salt in the pie.
  • Chill the pie dough for at least 30 minutes before rolling it out. This will help prevent the dough from shrinking in the oven.
  • When rolling out the dough, use a light touch and avoid overworking it. Overworked dough will be tough and chewy.
  • Trim the edges of the dough evenly before baking. This will help the pie look its best.
  • Bake the pie at a high temperature for the first 15 minutes, then reduce the temperature to finish baking. This will help the crust brown evenly.
  • Let the pie cool completely before serving. This will allow the filling to set and the flavors to meld.

Conclusion:

Shamrock Pie is a delicious and festive treat that is perfect for St. Patrick's Day. With its creamy filling, flaky crust, and shamrock design, this pie is sure to be a hit with everyone who tries it. So gather your ingredients and give this recipe a try. You won't be disappointed!
