Yield Makes about 2 cups

Number Of Ingredients 5

1 tablespoon vegetable oil
1 1/4 cups thinly sliced shallots (about 4 ounces)
3/4 cup mayonnaise
3/4 cup sour cream
4 ounces blue cheese, room temperature

Steps:

  • Heat oil in heavy medium saucepan over medium-low heat. Add shallots. Cover and cook until shallots are deep golden brown, stirring occasionally, about 20 minutes. Cool.
  • Whisk together mayonnaise and sour cream in medium bowl to blend. Add blue cheese. Using rubber spatula, mash mixture until smooth. Stir in caramelized shallots. Season dip to taste with salt and pepper. Cover dip and refrigerate until flavors blend, about 2 hours. (Can be made 2 days ahead. Keep refrigerated.) Serve dip chilled or at room temperature.

Tips:

  • Always use fresh shallots. Fresh shallots have a milder flavor than dried shallots, which can sometimes be too strong for this dip.
  • If you don't have blue cheese, you can substitute another type of cheese. Some good options include cheddar, brie, or Swiss cheese.
  • You can adjust the amount of mayonnaise to your liking. If you want a thicker dip, use less mayonnaise. If you want a thinner dip, use more mayonnaise.
  • If you are short on time, you can use a pre-made blue cheese dressing instead of making your own.
  • This dip is best served cold. Be sure to chill it for at least 30 minutes before serving.

Conclusion:

Shallot blue cheese dip is a delicious and easy-to-make appetizer that is perfect for any occasion. It is creamy, flavorful, and packed with shallots and blue cheese.
