EASY SEVEN LAYER RICE CASSEROLE

  • Layer the ingredients in the order given, pressing down firmly after each layer. This will help to prevent the layers from separating during baking.
  • If you don't have time to make the cornbread from scratch, you can use a store-bought mix.
  • Be sure to use a sharp knife to slice the onions and potatoes. This will help them to cook evenly.
  • If you like, you can add a layer of cheese between the cornbread and the meat mixture.
  • Bake the dish covered for 45 minutes, then uncover and bake for an additional 15 minutes, or until the cornbread is golden brown and the meat mixture is bubbling.
