Steps:

1 teaspoon garlic powder or to taste
2 teaspoons salt
4 tablespoons sesame oil (plain, not toasted finishing oil)
6 tablespoons water

Steps:

  • In a small bowl, combine water and oil. Stir wet ingredients into dry ingredients. Combine thoroughly, kneading any remaining bits into the dough by hand.

1 1/3 lbs yams
4 cups cooking oil, plus
1 tablespoon cooking oil
1/2 cup sugar
2 -3 teaspoons roasted sesame seeds
a bowl of cold water, for dipping

Steps:

  • Wash the yams, pare, and cut them into bite-sized chunks.
  • Heat a wok or a large, deep pan; add 4 cups of the oil and heat to 250*F.
  • Deep fry the yam chunks until tender, 1-2 minutes.
  • Heat another wok or pan and add the 1 Tbsp.
  • oil and the sugar; cook over low heat until the sugar is melted and caramelized.
  • Add the fried yams; mix well.

1 1/2 cups all-purpose flour
1/2 teaspoon cayenne
1/4 teaspoon salt
1/4 teaspoon dried oregano
1 egg, slightly beaten
2 tablespoons parmesan cheese
4 tablespoons sesame seeds

Steps:

  • Cream the butter.
  • Add flour, cayenne, salt and oregano. Mix until butter is completely blended into the flour mixture. May do in food processor.
  • Blend in the egg and work dough with hands until it looks like cookie dough. Add the Parmesan cheese and blend in well.
  • Divide into quarters. Divide each quarter into halves and roll out to make a long, finger- thick strand on a surface sprinkled with sesame seeds. They should be about 8 inch long.
  • Divide each strand into six pieces making a dozen pieces from each quarter of dough. Place on ungreased cookie sheet.
  • Bake at 400 deg. for 12-15 minute or until pale golden.
  • Great hot or at room temperature
