HONEY SESAME TILAPIA
This recipe was published in the food section of The Milwaukee Journal Sentinel. Unfortunately, I can't give proper credit because after trying the recipe once, it went into our family favorites cookbook and I tossed the clipping. My kids all love it, and every guest who has tried it has asked me for the recipe. Note: The recipe calls for sesame sticks, which are a snack food, found in most grocery stores, health food stores and nut specialty shops. Please don't try using sesame seeds instead, as I suspect one reviewer has done, or your results may not be as wonderful. :o)

Steps:
- Preheat oven to 350 degrees.
- Combine olive oil, sesame oil, lime juice, pepper flakes, salt and ginger.
- Place potatoes, pepper, and onion in a pyrex-type dish. The dish should be just long enough to fit both fillets and about 2 inches deep.
- Place the vegetables in the baking dish and toss with the oil-spice sauce.
- Bake for 25 minutes, stirring once.
- Remove from oven and push the vegetables to one side of the cooking dish. Place first fillet in dish and cover with the vegetables. Push vegetables aside to place other fillet in dish and cover it with the remaining vegetables.
- Bake for another 20 minutes or until tilapia is thoroughly cooked. It should flake and still be very moist.
Tips:
- Choose the freshest tilapia fillets available. Look for fillets that are firm and have a mild, sweet smell. Avoid fillets that are slimy or have a strong fishy odor.
- Use a light hand when seasoning the tilapia. Tilapia is a delicate fish that can easily be overpowered by strong flavors. A simple seasoning of salt, pepper, and garlic is often all that is needed.
- Cook the tilapia over medium heat. This will help to prevent the fish from overcooking and becoming dry. Tilapia is done cooking when it is opaque and flakes easily with a fork.
- Serve the tilapia immediately. Tilapia is best enjoyed when it is hot and fresh out of the pan. You can serve it with a variety of sides, such as rice, vegetables, or potatoes.
Conclusion:
Sesame tilapia is a healthy, delicious, and easy-to-make meal that is perfect for a weeknight dinner. The tilapia is flaky and flavorful, and the sesame crust adds a nice crunch. This dish is sure to be a hit with your family and friends.
