4 cups all-purpose flour
1 cup white sugar
1 ½ cups shortening
¾ cup milk
.063 teaspoon anise oil
2 ounces sesame seeds

Steps:

  • Combine flour and sugar in a bowl. Cut in shortening with a pastry blender-or work with your hands - until mixture resembles coarse meal.

Seeds stick better if put in sugared water and taken out and put on a clean lintless cloth. Roll on cloth with seeds, then flatten out too about 1/4-inch thickness. Cut into 2 inch strips, place on ungreased baking sheet.
  • Bake at 350 degrees F (180 degrees C) for 20 to 25 minutes, or until golden brown. Remove, cool completely, then store in an airtight container.

SESAME SEED COOKIES

Sesame Seed Cookies image

Though these are reminiscent of the traditional Greek or Italian cookies of the same name, the recipes originates in the US south and traces its roots to Africa. Nutty toasted sesame seeds are included in the dough as well as serving as the crispy coating. They are now commonly served at Kwanzaa celebrations. I have not tried this yet but am posting for ZWT 3.

SESAME SEED SNACK COOKIES

Sesame Seed Snack Cookies image

Not too sweet, covered in delicious sesame seeds, these are a favourite snack for my family. They keep about three days in a tin. I have tried using less oil, also draining some onto a paper towel after cooking, but without good results. The oil seems to be the magic ingredient for the special slightly chewy texture. The recipe is adapted from the same in "Chinese Cooking" by Mary Wilson.

Time 20m

Yield 12-14 cookies

Number Of Ingredients 9

1 1/4 cups whole wheat flour
3/4 teaspoon baking powder

SESAME SEED COOKIES

Sesame Seed Cookies image

In South Carolina and Georgia, these popular cookies are known as "benne wafers," taking their name from the West African word for sesame.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes about 48 cookies

Number Of Ingredients 8

1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
8 tablespoons (1 stick) unsalted butter, room temperature
1 cup packed light-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup hulled sesame seeds, toasted

Steps:

  • Heat oven to 350 degrees. Line four baking sheets with parchment paper, and set aside. Sift together flour, salt, and baking soda, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy. Add egg and vanilla, and beat until combined. Add reserved flour mixture, and beat until combined. Add toasted sesame seeds, and beat until incorporated.
  • Using a spoon, drop cookie batter, about 1 tablespoon at a time, onto prepared baking sheets, allowing at least 2 inches between cookies for spreading.
  • Bake until golden, 6 to 8 minutes. Remove from oven, and cool on a wire rack.

Tips:

  • Measure ingredients accurately: Correct measurements ensure the right texture and flavor. Use measuring cups and spoons, and level off dry ingredients with a knife.
  • Use quality ingredients: Fresh, high-quality ingredients contribute to the best taste and texture. Choose good-quality sesame seeds, butter, sugar, and vanilla extract.
  • Chill the dough: Chilling the dough before baking helps it hold its shape and prevents spreading. Chill for at least 30 minutes, or up to overnight.
  • Roll the dough evenly: Roll the dough to an even thickness so that the cookies bake evenly. Aim for a thickness of about 1/4 inch.
  • Bake the cookies at the right temperature: The cookies should be baked at a moderate temperature (350°F or 175°C) to ensure they bake evenly without burning.
  • Let the cookies cool completely: Allow the cookies to cool completely on a wire rack before storing or serving. This helps them firm up and develop their full flavor.

Conclusion:

These sesame seed snack cookies are a delicious and easy-to-make treat that is perfect for any occasion.
