Yield 12 Muffins

Number Of Ingredients 13

1 egg
1 1/3 cups mashed ripe banana
3/4 cup packed brown sugar
1/3 cup applesauce
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
2 teaspoons baking powder
1 1/4 teaspoons salt
1 teaspoon ground cinnamon
1 cup quick cooking oats
1/2 cup semisweet chocolate chips
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 12 cup muffin pan. In a large bowl, combine egg, banana, brown sugar, applesauce and vanilla. In a separate bowl, sift together flour, baking soda, baking powder, salt and cinnamon. Gently stir flour mixture and oatmeal into banana mixture. Fold in chocolate chips and walnuts. Pour batter into prepared muffin cups. Bake in preheated oven or 15 to 20 minutes, or until light brown. Remove muffins from pan and place on a wire rack to let cool before serving.

Tips:

  • Muffin Tin Preparation: Before you start, grease or line your muffin tins with paper liners to prevent the muffins from sticking. This will ensure easy removal and a clean presentation.
  • Proper Mixing: Avoid overmixing the batter. Overmixing can result in dense and tough muffins. Mix just until all the ingredients are well combined. Overmixing develops the gluten in the flour, which can make the muffins tough.
  • Measuring Flour: To ensure accurate measurements, use a kitchen scale to measure the flour. Alternatively, spoon the flour into a measuring cup and level it off with a knife.
  • Muffin Batter Consistency: The ideal muffin batter should be thick and slightly lumpy. If the batter is too thin, the muffins may spread too much while baking. If it's too thick, they may be dry and crumbly.
  • Filling and Topping: If you're adding fillings or toppings to your muffins, be sure to do so just before baking. This will prevent the fillings from sinking to the bottom or the toppings from getting soggy.
  • Baking Temperature and Time: Follow the recipe's recommended baking temperature and time closely. Muffins are generally baked at a high temperature (around 400°F) for a short period (about 20-25 minutes). This helps them rise quickly and develop a golden-brown exterior.

Conclusion:

With careful attention to ingredients, measurements, and baking techniques, you can create delicious and fluffy seminary muffins that are perfect for breakfast, snacks, or as a delightful treat. Experiment with different flavor combinations, fillings, and toppings to find your favorite recipes. Remember, baking is a skill that improves with practice, so keep experimenting and enjoying the process.
