3 eggs, beaten
1 cup raisins
1 teaspoon vanilla extract
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons baking soda
2 cups rolled oats
¾ cup chopped pecans

Steps:

  • In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed. 1 c shortening
1 c white sugar
1/2 c brown sugar, lightly packed
1 egg
1 1/2 c flour
1 tsp baking soda
1 tsp cinnamon
1 1/2 c old fashioned oatmeal
3/4 c finely chopped walnuts
1 tsp vanilla extract

Steps:

  • 1. Cream together the shortening, white sugar and brown sugar. Add egg
  • 2. Sift together the flour, baking soda, and cinnamon. Add it to first mixture.
  • 3. Then add the oatmeal, walnuts and vanilla. Chill dough for an hour.
  • 4. Drop walnut sized pieces on a greased cookie sheet. Butter the bottom of a small glass, then dip it in granulated sugar and use to flatten out the cookie balls. Just keep dipping in sugar-you don't need to re-butter the bottom of the glass.
  • 5. Bake at 350° for 10 minutes. Makes about 6 dozen cookies
