This simple spelt bread recipe made from 100% whole spelt flour with various seeds is a great bread for sandwiches and easy if you want to make some toast. It doesn't take much effort to prepare this bread. About 2 hours in which you can devote yourself to other things while the dough is rising. Really it is just about 10-15 minutes active time where you have actual stuff, the rest is rising and baking time.

3 cups + 2 tbsp (500 g) spelt flour
4 tbsp sunflower seeds
4 tbsp pumpkin seeds
4 tbsp flaxseed, crushed
4 tbsp sesame seeds
2 1/4 tsp active dry yeast
2 cups (500 ml) lukewarm water
1-2 tsp sea salt
2 tbsp Apple Cider Vinegar

Steps:

  • Place the flour, seeds, and yeast in a mixing bowl of a stand mixer. Mix it briefly until the yeast is mixed with the flour. Add the water and knead the dough on a low level for about 4 minutes. Now add the salt and apple cider vinegar and knead for another 2 minutes. Sprinkle some flour over the dough and cover it with a cloth. Let it rise in a warm place for 1 hour. The dough should now have twice the volume. Take parchment paper and use it to line a loaf pan. Put a few seeds on the bottom of the loaf pan. Briefly knead the dough and put it in the loaf pan. Let the dough rise for an additional hour. Preheat the oven to 430°F (220°C). Sprinkle a few more seeds on the bread and put it in the oven. Set the oven to 400°F (200°C) and bake for 45-60 minutes. Let it cool completely before you cut it.

2 teaspoons dry yeast (make sure it's fresh)
2 cups bread flour
2 cups whole wheat flour
2 tablespoons wheat germ
1 teaspoon sea salt
2 tablespoons poppy seeds
2 tablespoons sesame seeds
2 tablespoons amaranth, and or 2 tablespoons quinoa
1/4 cup raw shelled sunflower seeds
2 tablespoons butter, sliced thin
2 tablespoons plain yogurt
2 tablespoons honey
1 1/4 cups lukewarm water

Steps:

  • Start at the top (recommended) or the bottom of the list, and put all the ingredients into the bread machine. Just make sure the salt and wet stuff stays away from the yeast until it mixes. If you like the old fashioned way, that will work too - just use your usual process.
  • For rolls, use the dough cycle. When that cycle is done, dump it out on a floured surface and cut everything into even quarters, twice. Put the wads, evenly spaced, on a lightly oiled cookie sheet. Let them rise once more in a warm area covered with waxed paper for a half hour or a little longer until they have roughly doubled in size, depending on how knocked down they got while cutting. This was the first recipe I used in a bread machine and I'm pretty pleased with the results. The original recipe comes from a local organic flour mill and called for 1 beaten egg, which I replaced with Ener-g.

1 beaten egg (won't accept ener-g as a recognized ingredient, but that's what I used with success)
2 teaspoons lemon juice

1 teaspoon sea salt
3 cups light spelt flour (white)
2 teaspoons bread machine yeast

Steps:

  • Add ingredients to machine's mixing pan in the order listed.
  • Use 2 lb loaf setting, for whole wheat. Altho, I find the basic setting on mine works well with the light spelt. My machine also comes close to burning the bottom so I set the browning to light. You know your settings best.
  • Let the loaf rest on a cooling rack for 15 minutes before slicing.

A combination of two recipes I developed. You can use unsweetened almond milk, soy milk or hemp beverage instead of the 1% milk. Honey can be substituted for the white sugar, if desired. Makes a 2 lb. loaf that almost fills my 3 lb. Black and Decker loaf pan. I haven't tried a 1 lb loaf in my old B&D bread maker with a 1 1/2 lb. loaf pan but I suspect it should work. 1 cup of seeds is needed. The recipe below is what I use but you should be able to use any combination of seeds you have available to make up the 1 cup.

2 tablespoons canola oil

3 ½ cups whole grain spelt flour
3 cups white spelt flour, or more as needed
2 cups very warm water
½ cup canola oil
¼ cup white sugar
4 teaspoons active dry yeast
2 ½ teaspoons salt

Steps:

  • Mix both 3 1/2 cups whole grain spelt flour, 3 cups white spelt flour, water, oil, sugar, yeas, and salt together in a bowl with a spoon until mostly combined. Switch to kneading by hand, adding more white spelt flour if necessary, but not too much. Keep kneading until dough is the texture of your earlobe.
  • Place dough on a parchment paper-lined baking sheet in the shape of a loaf and allow to rise until doubled in size, about 1 hour.
  • Preheat the oven to 375 degrees F (185 degrees C).
  • Bake in the preheated oven until top is a deep golden brown and the bread sounds hollow when tapped, about 20 minutes.
