1 -2 teaspoon chili powder (to your preference)
1 teaspoon salt
picante sauce
1 cup shredded monterey jack cheese or 1 cup sharp cheddar cheese

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. This is my grandma's meat loaf recipe that she has been making for years! It doesn't taste like the regular bland meatloaf. It is very affordable to make and this one has a bit of a sweet taste thanks to the sauce you put on top! 1 1/2 lbs ground beef
2 eggs
3/4 cup whole milk
1/2 cup crushed cracker (Club or Saltine)
1/4 cup yellow onion (finely chopped)
2 tablespoons fresh parsley or 2 teaspoons dried parsley
1 teaspoon salt (optional)
1/2 teaspoon ground sage
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon dry mustard

Steps:

  • Mix meat, crackers, milk, eggs, onion, parsley, sage, and salt in a large bowl with HANDS.
  • Put the mixture in an ungreased 8x10 loaf pan and shape it so that there is a small amount of space between the meatloaf and the pan on all sides.

2 tablespoons prepared horseradish, drained
1 tablespoon Dijon mustard
1 loaf unsliced round bread
2 tablespoons butter or 2 tablespoons margarine, softened
1/3 lb thinly sliced deli ham
1/3 lb sliced monterey jack cheese or 1/3 lb muenster cheese
1/3 lb thinly sliced deli turkey
1/3 lb thinly sliced cheddar cheese or 1/3 lb colby cheese
1/3 lb thinly sliced deli roast beef
1 medium tomatoes, sliced
1 large dill pickle, sliced lengthwise
1 small red onion, thinly sliced
lettuce leaf

  • Cut bread in half; carefully hollow out bottom and top of loaf, leaving 3/4" shell (discard removed bread or save for another use).
