HOMEMADE CRISPY SEASONED FRENCH FRIES

Homemade Crispy Seasoned French Fries image

My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

Provided by Cassie

Categories     Side Dish     Potato Side Dish Recipes

Time 25m

Yield 8

Number Of Ingredients 8

2 ½ pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
½ cup water, or as needed
1 cup vegetable oil for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

MONTREAL SEASONED OVEN FRIES

Montreal Seasoned Oven Fries image

This is a recipe I litally threw together in a pinch to accompany burgers flavored with montreal steak seasoning. The fries turn out tender on the inside and crispy on the outside with the flavors of montreal steak seasoning. Please be warned, though, that these are lightly salty. DH and I enjoy a bit of saltiness, so that wasn't a problem for us.

SIDE ESSENTIALS: SEASONED CHEESY FRIES

Side Essentials: Seasoned Cheesy Fries image

This recipe is not so much about the fries, as it is the seasoning and the cheese sauce. This go great on a plateful of French fries, and are equally good on steamed veggies. Or as a seasoning for a nice juicy burger. We will be using them on fries; but, not just any old fries... But, more on that later. So, you ready... Let's...

Provided by Andy Anderson !

Categories     Potatoes

Time 20m

Number Of Ingredients 19

PLAN/PURCHASE
THE SEASONING
2 tsp smoked paprika
1 tsp salt, kosher variety, fine grind
1 tsp garlic powder
1.2 tsp white pepper, freshly ground
1/4 tsp dried oregano
1/4 tsp coconut sugar
THE CHEESE SAUCE
2 oz sharp cheddar, grated
2 oz pepper-jack, grated
2 tsp arrowroot powder
1 - 2 pinch ground cumin
1/2 c evaporated milk
1 - 2 tsp hot sauce, i prefer frank's
THE FRIES
more on the fries later
OPTIONAL ITEMS
crispy bacon bits, for topping

Steps:

  • 1. PREP/PREPARE
  • 2. I used to deep fry my French fries... until I became acquainted with Bonnie's oven-baked fries; now, it is my go-to method for making fries. You can use any fries that you desire. You can make your own recipe, buy a bag of frozen... Up to you. However, if you want really yummy, oven-baked fries, check out this recipe. I do not think that you will be disappointed: https://www.justapinch.com/recipes/side/potatoes/best-oven-baked-fries-and-potato-wedges-2.html?r=4
  • 3. The making of the sauce can be a bit tricky. If your burner is too high, or you let it cook too long it can get a grainy texture. I would have a bit of extra cheese, and evaporated milk on hand, just in case you need to do some adjusting. Finally, I like to check the seasoning as it cooks. And, depending on the type of cheeses being used, I find that it usually needs a bit of salt, to help bring out the flavors.
  • 4. Gather your Ingredients (mise en place).
  • 5. THE SEASONING
  • 6. Combine the ingredients for the seasoning in a small bowl, and reserve.
  • 7. THE FRIES
  • 8. If you are using Bonnie's recipe, then sprinkle on a good portion of the seasoning, just before you put them into the oven. If you are using frozen fries, then follow package directions for baking, and sprinkle on the seasoning just before you put them into the oven.
  • 9. THE CHEESE SAUCE This is a fairly straightforward way to make a good cheese sauce. You can vary it using different cheeses, and spices.
  • 10. Add the grated cheese, and toss with the arrowroot powder, and cumin, until thoroughly coated.
  • 11. Pour in the evaporated milk, and set the temp to medium low.
  • 12. Stir until the cheese has melted into the liquid.
  • 13. When fully melted, set the burner to low, low (just enough to keep it warm), until needed.
  • 14. Remove the fries from the oven.
  • 15. PLATE/PRESENT
  • 16. You can go about this in several ways: 1. On The Side: Place the fries on a plate, sprinkle on a bit more seasoning, and serve the cheese on the side. 2. Over The Top: Follow method 1; however, instead of having the cheese on the side, drizzle it on top. 3. Cheesy French Fry Bowl: My personal fav. Put the fries in an individual bowl, sprinkle on some seasoning, drizzle with cheese, give them a fork, and stand back. And a sprinkle of crispy bacon bits would be a brilliant addition. Enjoy.
  • 17. Keep the faith, and keep cooking.

SEASONED OVEN FRIES

Categories     Potatoes

Number Of Ingredients 2

4 large potatoes
1 c oil free italian dressing

Steps:

  • 1. Thickly slice the potatoes lengthwise.
  • 2. Place the potatoes in a flat baking dish.
  • 3. Pour the dressing over the potatoes and marinate for 1 hour, turning occasionally to make sure that all are coated with dressing.
  • 4. Preheat the oven to 450.
  • 5. Place the potatoes on a nonstick baking sheet.
  • 6. Bake until tender and golden brown.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for French fries because they are starchy and have a low moisture content. This makes them crispy on the outside and fluffy on the inside.
  • Cut the potatoes into even strips: This will help them cook evenly. Use a sharp knife or a French fry cutter to get the best results.
  • Soak the potatoes in water: This will help to remove excess starch and make the fries crispier. Soak the potatoes for at least 30 minutes, or up to overnight.
  • Dry the potatoes thoroughly: Before frying the potatoes, make sure they are completely dry. This will help them to crisp up.
  • Fry the potatoes in hot oil: The oil should be between 325 and 350 degrees Fahrenheit. Use a deep fryer or a large saucepan filled with oil.
  • Fry the potatoes in batches: Do not overcrowd the fryer or saucepan. This will cause the fries to stick together and become soggy.
  • Season the fries immediately after frying: This will help the seasoning to adhere to the fries. Use your favorite seasonings, such as salt, pepper, garlic powder, or paprika.

Conclusion:

Seasoned fries are a delicious and versatile side dish that can be served with a variety of meals. They are easy to make and can be customized to your liking. With a few simple tips, you can make perfect seasoned fries at home. So next time you are looking for a quick and easy side dish, give these seasoned fries a try.
