It's a perfect union between Seafood Alfredo and Stuffed Shells. Pasta shells stuffed with a mix of shrimp, scallops, crab and cheese, baked in Alfredo sauce.

12 - 14 cooked jumbo pasta shells
1 tbsp olive oil
2 shallots
1 cup cherry tomatoes (quartered)
2 large cloves of garlic (minced)
5 oz claw crab meat
4 oz small scallops
5 oz shrimp (chopped)
1 tsp lemon juice
salt
1/3 cup diced green onion
1 cup Mozzarella cheese

1 tbsp butter
1 1/4 cup heavy cream
1/2 cup sour cream
1 clove of garlic (pressed)
1/4 cup dry Parmesan cheese
1/4 cup fresh grated Parmesan cheese
salt

Fresh grated Parmesan for topping

Steps:

  • Cook shells until they are almost done and set aside.
  • Preheat oven to 350 and lightly grease a casserole dish.
  • In a medium mixing bowl, place diced green onion and Mozzarella cheese.
  • In a cooking pan, over medium heat, heat up oil and add diced shallots, chopped tomatoes and minced garlic. Saute veggies until soft and fragrant.
  • Add seafood and mix.
  • Add lemon juice and salt to taste. Cook just until seafood is done (until shrimp are pink and scallops are white). Add veggie/seafood mixture to the mixing bowl. Mix well.
  • You can make Alfredo in the same pan as you cooked seafood.
  • Melt butter in the pan and saute garlic just until fragrant. Add heavy cream and sour cream. Carefully whisk until combined with a silicone covered whisk. Bring to simmer.
  • Add cheeses and some salt, mix well. Simmer for about 5 minutes.
  • Add sauce to the casserole dish.
  • Stuff pasta shells with the seafood mixture and carefully place each in the sauce. You can scoop some sauce over the shells as well.
  • Grate some Parmesan cheese over the top.
  • Bake for 17-20 minutes.

1 cup grated mozzarella cheese
1 cup ricotta cheese
2 eggs, beaten
1/4 teaspoon garlic powder
1/2 teaspoon salt
1 cup crabmeat, pieces, diced small (can use imitation if desired)
1 cup diced shrimp (I use frozen salad size so there are no tails and they are sweeter)
1/2 cup shredded asiago cheese
1/2 cup shredded parmesan cheese
1 cup heavy cream
1/2 cup milk
2 tablespoons butter (do not substitute)
2 -3 garlic cloves (or to taste)
1/2 teaspoon salt
1/2 cup grated parmesan cheese
1/2 cup grated asiago cheese
1/2 lemon, juice of
1 teaspoon grated lemon rind
1/2 cup water
1 tablespoon cornstarch
16 -20 large pasta shells
1 teaspoon salt
boiling water

Steps:

  • Boil giant pasta shells in salted water until they are pliable but not quite completely cooked. While they are cooking, you can make your sauce.
  • Melt butter in skillet.
  • Add garlic and saute for 3 minute being careful not to burn it.
  • Add the cream, milk, salt, lemon zest and bring to a boil. Turn heat to low. Wait 2-3 minutes and add cheeses.
  • When cheese has melted, add the lemon juice. Stir over med. heat for 2-3 minutes.
  • Make a slurry of water and cornstarch, mixing it well. Add to the sauce and cont. to cook until it thickens nicely. Be sure to keep an eye on it, and to stir it, because it will thicken quickly. Don't overcook it or you will have a paste. It stays nice and creamy even when baked.
  • Drain your pasta shells and run under cold water until you can handle them. Stuff with the cheese and seafood mixture.
  • Pour the sauce over all and bake 30 minute in a 350 degree oven.

Kosher salt and freshly ground black pepper
30 jumbo pasta shells
3 cups (24 ounces) whole-milk ricotta
2 cups (8 ounces) Italian blend shredded cheese
1/4 teaspoon crushed red pepper flakes, plus more for serving
1/4 teaspoon finely grated lemon zest
2 pinches ground nutmeg
3 tablespoons olive oil
2 boneless, skinless chicken thighs (about 1 pound), cut into 1/2-inch pieces
1 large leek, white and light-green parts only, thinly sliced into half-moons
1/2 cup dry white wine
2 1/2 cups heavy cream
3/4 cups freshly grated Parmesan
Chopped fresh chives, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil and cook the pasta shells according to package directions for al dente. Drain and run under cold water until cool enough to touch.
  • Mix the ricotta, 1 cup of the Italian blend cheese, the red pepper flakes, lemon zest, 1 pinch of the nutmeg, 1/2 teaspoon salt and a few grinds black pepper together in a medium bowl. Set aside.
  • Heat the olive oil in a large heavy-bottom pot over medium-high heat. Add the chicken, 1/2 teaspoon salt and a few grinds black pepper and cook, stirring occasionally, until the chicken is just cooked through, 5 to 6 minutes. Transfer to a plate and add the leek to the pot. Cook, stirring occasionally, until softened, 3 to 4 minutes.
  • Pour the wine into the pot and stir to scrape up any browned bits with a wooden spoon. Bring to a boil and reduce until completely evaporated, stirring. Lower the heat to medium, pour in the cream and bring to a simmer. Stir in the Parmesan, the remaining pinch nutmeg, 1 teaspoon salt and a few grinds black pepper. Remove from the heat.
  • Fold the chicken and its juices from the plate into the ricotta mixture. Spread 1 cup of the cream sauce onto the bottom of a 9-by-13-inch casserole dish. Fill each pasta shell with a spoonful of ricotta mixture. Arrange the stuffed shells, seam-side up, shingling them so they all fit (you should have 5 shells along the short side and 6 shells along the long side). Ladle the remaining sauce over the top, then sprinkle with the remaining 1 cup Italian cheese blend and cover with aluminum foil.
  • Bake until the cheese is melted and the sauce is bubbling, about 20 minutes. Remove the foil and continue to bake until the cheese and tops of noodles start to turn golden brown, 15 to 20 minutes. Let cool for 10 minutes before sprinkling with some chives and more red pepper flakes.

18 jumbo pasta shells, cooked al dente
1 (16 ounce) jar Ragú® Pasta Sauce, alfredo sauce, divided
3/4 lb cooked shrimp, peeled, deveined and roughly chopped
8 ounces lump crabmeat
1 egg
6 slices bacon, cooked crisp and crumbled
2 tablespoons diced red bell peppers
2 green onions, thinly sliced
4 ounces chive & onion cream cheese, softened
1/2 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese, divided
1/3 cup panko breadcrumbs
2 tablespoons butter, melted

Steps:

  • Heat oven to 350 degrees F. Spoon 2 tablespoons of the Alfredo sauce into an 8"X11" glass baking dish and spread evenly on bottom. Set aside.
  • In a large bowl, combine the shrimp, crabmeat, egg, bacon, red bell pepper, green onion, cream cheese, mozzarella, all but 2 tablespoons of the grated Parmesan and 1 tablespoon Alfredo sauce. Mix well with hands.
  • Carefully stuff each shell with about 2-3 tablespoons crab mixture, mounding slightly and packing into pasta shell. Place each in prepared baking dish.
  • Spoon remaining Alfredo sauce evenly over stuffed shells.
  • In a small bowl, combine the breadcrumbs, butter and remaining Parmesan. Mix well. Sprinkle evenly over stuffed shells.

1 cup Ragú® Pasta Sauce (spicy Italian sauce)
1 large spaghetti squash
1 lb Italian sausage
2 medium zucchini, chopped- about 3 cups
1 large yellow onion, diced-about 2 cups
4 garlic cloves, minced
3 tablespoons chopped oregano, 1tsp reserved (to garnish)
4 tablespoons butter
1 cup panko Italian seasoned breadcrumbs
4 ounces goat cheese
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat Oven to 400.
  • Split clean, dry Spaghetti squash long ways and clean, removing all seeds. I like to use a large spoon for this.
  • Oil liberally with olive oil and salt and pepper to taste.
  • Place cut side down and roast 45-60 minutes until just tender enough to fluff with a fork. Time will vary depending on size of squash.
  • While squash is roasting, work on dicing vegetables and brown Italian sausage.
  • Once sausage is browned add in half of the butter and the entire onion. Cook until tender.
  • Add in garlic, zucchini, and Ragu Spicy Italian Sauce and simmer until all veggies are tender.
  • Season with chopped oregano, salt and pepper to taste.
  • Once roasted squash is tender, drag a fork from edge to edge just enough to loosen the flesh from the skin. Divide the Ragu ,mixture between the two halves. Sprinkle crumbled goat cheese evenly between the two pieces.
  • In a small bowl, melt remaining butter and add in bread crumbs. Sprinkle evenly on top of the two pieces or squash, careful to cover Ragu mixture.
  • Place back into oven and bake for 15 minutes or until the breadcrumbs are nicely golden brown.
  • Allow to cool 5 minutes. Serve and enjoy!

1 medium scallion, sliced very thin
1/4 small green pepper, finely diced
1/2 cup mayonnaise

1 -2 tablespoon chipotle chili sauce
1/3 cup seasoned bread crumbs

  • In a hot pan heat oil add and saute peppers, carrots, onions, mushroom stems, and garlic seasoning with salt and pepper cook 4 minutes.
  • Deglaze with the wine and reduce till almost gone.

1 (14 ounce) jar Ragú® Pasta Sauce (I like Ragu 6 Cheese Pasta Sauce)
1 (12 ounce) box jumbo pasta shells
2 (15 ounce) containers ricotta cheese
4 eggs, slightly beaten
2 cups finely shredded mozzarella cheese, divided
1 cup parmesan cheese, divided
1/2 cup feta cheese, crumbles
1/2 cup breadcrumbs
1/4 teaspoon pepper

Steps:

  • Pre-heat oven to 400 degrees Fahrenheit.
  • Cook shells in salted water according to directions on the package.
  • Drain pasta and let cool.
  • Pour 1/3 of pasta sauce in bottom of a 9 x 13 glass pan. Make sure pasta sauce evenly coats bottom of pan.
