Yield 4

Number Of Ingredients 5

1 pound sashimi grade yellowfin tuna
kosher salt to taste
fresh ground black pepper to taste
½ cup Italian seasoned bread crumbs
3 tablespoons olive oil

Steps:

  • With a sharp knife, cut the tuna into 4 large pieces for appetizer portion, 2 large pieces for dinner portion. Use your judgment on what shape you want to cut your tuna because not all tuna is the same size or shape. However, the shape should somewhat resemble a miniature brick.
  • Season the tuna pieces with salt and pepper. Coat lightly on all sides with bread crumbs. Heat olive oil in a large heavy skillet over high heat. The pan should be as hot as you can get it. Place the tuna in the pan, and sear on each side for about 45 seconds for small portions, or 1 minute for large. Remove from pan. The tuna will be very rare.
  • Slice each 'brick' into 1/4 inch thick slices, and fan out on a serving plate. Enjoy plain, or with the condiments of your choice.

SEARED TUNA

Categories     appetizer

Time 25m

Yield 18 pieces

Number Of Ingredients 4

2 pounds sushi-grade ahi tuna, cut into 1-inch cubes
1/2 cup olive oil
Salt and freshly ground black pepper
Rosemary stems cut into skewers about 2-inches long with leaves attached

Steps:

  • Preheat a grill or grill pan to high.
  • Put cubed tuna in a mixing bowl with olive oil, salt and pepper. Toss to incorporate the seasoning. Skewer the tuna through the center half way down the skewer. Season again with salt and pepper. Sear on a very hot grill for 10 seconds on all sides. Cool and serve at room temperature.

Tips:

  • Choose the right tuna steak: Opt for a thick, sushi-grade tuna steak that is at least 1 inch thick. This will ensure that the tuna is cooked evenly and remains moist and tender.
  • Pat the tuna steak dry: Before searing the tuna, pat it dry with paper towels. This will help to remove excess moisture and prevent the tuna from steaming rather than searing.
  • Season the tuna steak generously: Season the tuna steak liberally with salt and pepper, or a blend of your favorite spices. This will help to enhance the flavor of the tuna.
  • Sear the tuna steak in a hot skillet: Heat a skillet or grill pan over medium-high heat. Once the pan is hot, add a little oil and swirl to coat. Place the tuna steak in the pan and sear for 1-2 minutes per side, or until the tuna is cooked to your desired doneness.
  • Let the tuna steak rest: Once the tuna steak is cooked, remove it from the pan and let it rest for a few minutes before slicing and serving. This will help to keep the tuna moist and juicy.
  • Serve the tuna steak with your favorite dipping sauce: Seared tuna steak can be served with a variety of dipping sauces, such as soy sauce, wasabi, or a citrus-based sauce.

Conclusion:

Seared tuna steak is a delicious and versatile appetizer that can be enjoyed on its own or as part of a larger meal. By following these tips, you can easily create a seared tuna steak that is perfectly cooked and bursting with flavor. Whether you are a seasoned chef or a beginner in the kitchen, this recipe is sure to impress your friends and family.
