1 cup chanterelle mushrooms, cut into 1/2-inch pieces
1/4 teaspoon sugar

3 cups packed spinach leaves, stemmed
4 large sea scallops
2 tablespoons salted butter

SAUTéED SCALLOPS WITH MUSHROOMS & SPINACH SAUCE

Sautéed scallops with mushrooms & spinach sauce image

A quick, impressive dish that's easy to prepare and cook, creating stacks of flavour within minutes

Provided by Gary Rhodes

Categories     Dinner, Side dish, Starter

Time 15m

Number Of Ingredients 6

3 big knobs of butter
100g mushroom , sliced (button, chestnut or cleaned wild)
100g spinach , stems trimmed and washed
2 tsp groundnut oil
6 good-sized scallops , shelled and cleaned (with or without corals)
nutmeg , for grating

Steps:

  • Melt a knob of butter in a frying pan. Once sizzling, add the mushrooms and fry for just a min or two before adding the spinach. Cook on a high heat for about 1 min, allowing the leaves to wilt and soften. Drain the leaves and mushrooms in a sieve or small colander set over a bowl, pressing them gently in the sieve to release the juices (the juices will provide the base for the sauce, so don't discard them). Keep warm to one side.
  • Heat the oil in a separate clean frying pan. When very hot, add the scallops. Sauté for a couple of mins without disturbing them at all, then add a knob of butter to the pan. Turn the scallops, season with salt and pepper, then baste with the sizzling butter. Continue to cook for a further couple of mins until the scallops are ready.
  • While sautéing the scallops, return the saved spinach juices to the pan the spinach and mushrooms were cooked in, then whisk in the remaining knob of butter to create the sauce. Season with salt and pepper and a grating of nutmeg.
  • Now finish in style: Arrange spinach and mushrooms on plates or in bowls, sit the scallops on top, then spoon the nutmeg spinach sauce around.

SEARED SCALLOPS WITH JAMMY CHERRY TOMATOES

Seared Scallops With Jammy Cherry Tomatoes image

The simple, summery dinner is a reminder that in-season produce and fresh seafood shine brightest with little fussing. Seared scallops are paired with cherry tomatoes that are cooked in white wine and butter until they're falling apart, and the whole thing is finished with a sprinkle of fresh herbs and lemon zest. Equal parts casual and elegant, this dish is best served straight from the skillet, with a big green salad, a nice loaf of bread and the rest of the wine.

Provided by Lidey Heuck

Categories     dinner, weekday, seafood, main course

Time 25m

Yield 4 servings

Number Of Ingredients 11

3 tablespoons unsalted butter
1/2 cup thinly sliced shallots (about 2 shallots)
2 garlic cloves, minced
1/4 cup dry white wine, such as muscadet or sauvignon blanc
1 pound cherry tomatoes, cut in half through the stem (about 3 cups tomatoes)
Kosher salt and black pepper
16 large sea scallops (about 1 pound), tough muscle removed
2 tablespoons grapeseed oil, plus more as needed
1 lemon, halved
Julienned fresh basil and mint, for serving
Coarse sea salt, for serving

Steps:

  • Heat a large (12-inch) skillet over medium-low and add the butter to melt. Add the shallots and cook, stirring occasionally, for 3 to 5 minutes, until tender but not browned. Add the garlic and cook for 30 seconds to 1 minute, until fragrant.
  • Add the wine and cook until about half the liquid has evaporated.
  • Add the tomatoes, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper and cook over medium-heat, stirring occasionally, for 10 to 12 minutes, until the tomatoes have released their juices and almost completely collapsed. Transfer the tomato mixture to a small dish (use a rubber spatula to get every last bit of the sauce!), then carefully wipe out the pan with a damp paper towel.
  • Pat the scallops dry. Add the grapeseed oil to the skillet and turn the heat to medium-high. When the oil is very hot, add half the scallops, spacing them evenly in the pan, and season with kosher salt. Cook without moving for 2 to 3 minutes, until golden brown on the bottom. Flip and cook for 1 more minute. Don't overcook! Transfer the scallops to a plate and repeat with the remaining scallops, adding more oil if necessary.
  • Drain any remaining oil and take the skillet off the heat. Return the tomatoes and their juices to the skillet and squeeze in 1 tablespoon lemon juice. Return the scallops to the skillet, nestling them into the tomatoes. Top with the zest of both lemon halves, julienned basil and mint, and a generous sprinkle of coarse sea salt, and serve immediately.

Tips:

  • Choose high-quality scallops. Look for scallops that are plump and firm, with a slightly translucent appearance. Avoid scallops that are slimy or have an off odor.
  • Sear the scallops properly. To get a nice sear, make sure the scallops are dry before cooking. Pat them dry with a paper towel and then season them with salt and pepper. Heat a skillet over medium-high heat and add a little bit of oil. Once the oil is shimmering, add the scallops and sear them for 2-3 minutes per side, or until they are golden brown and cooked through.
  • Make sure the salsa is fresh. The salsa is a key component of this dish, so make sure it is fresh and flavorful. Use ripe tomatoes, onions, and cilantro. You can also add other ingredients to the salsa, such as chopped jalapeños or bell peppers.
  • Cook the spinach and mushrooms properly. The spinach and mushrooms are cooked in the same skillet as the scallops. Cook the spinach until it is wilted and the mushrooms until they are soft and browned.
  • Serve the dish immediately. This dish is best served immediately after it is cooked. The scallops will be tender and juicy, the salsa will be fresh and flavorful, and the spinach and mushrooms will be perfectly cooked.

Conclusion:

Seared scallops with tomato salsa, spinach, and mushrooms is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The scallops are cooked to perfection, the salsa is fresh and flavorful, and the spinach and mushrooms add a touch of elegance. This dish is sure to impress your guests and leave them wanting more.
