- Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

- In large bowl, dissolve yeast in warm water. Stir in half of the flour, the oil, salt and sugar. Stir in enough remaining flour to make dough easy enough to handle.
- Turn dough onto lightly floured surface; knead about 10 minutes or until smooth and elastic. Place dough in large bowl greased with shortening, turning dough to grease all sides. Cover and let rise in warm place 20 minutes.
- Gently push fist into dough to deflate. Cover and refrigerate at least 2 hours but no longer than 48 hours, deflating dough occasionally.
- Move oven rack to lowest position. Heat oven to 500°F. On lightly floured surface, press or roll dough into 12-inch round. Place on ungreased pizza screen or in 12-inch perforated pizza pan. Press dough from center to edge so edge is thicker than center.
- Peel shrimp, leaving tails intact. Spread pizza sauce over dough to within 1/2 inch of edge. Sprinkle cheeses over sauce. Arrange shrimp, anchovies and scallops on cheeses. Sprinkle basil, pepper and garlic over seafood. Bake about 10 minutes or until shrimp are pink and firm, scallops are white and cheeses are melted.

SAVORY SEAFOOD PIZZA

- Spray a large bowl with cooking spray. Coat pizza dough with spray and rosemary; place into the bowl. Cover with a towel and let rise in a warm place until doubled in volume, about 1 hour.
- Spray a baking sheet with cooking spray; lightly dust with cornmeal. Stretch the dough onto the sheet until it covers the bottom and dangles over the edge.
- Preheat oven to 450 degrees F (230 degrees C).

TIM'S SEAFOOD PIZZA
Steps:
- Preheat oven to 200 degrees F (95 degrees C).
- Place garlic in a small stainless steel bowl; drizzle with 1 tablespoon olive oil and cover with aluminum foil.
- Bake in the preheated oven until tender and browned, about 1 hour. Remove and chop garlic. Increase oven temperature to 375 degrees F (190 degrees C).
- Grease a 10x12-inch pan with the remaining olive oil; sprinkle lightly with garlic salt. Place crust onto the pan.
- Mix spinach, mayonnaise, and Parmesan cheese together in a bowl. Spread mixture over the pizza crust.
- Sprinkle chopped roasted garlic along the edges of the crust. Cover with 1/2 the Italian cheese blend. Add lobster and shrimp. Sprinkle on onions on top and the remaining Italian cheese blend. Finish with olives. Drizzle with the remaining oil; sprinkle seafood seasoning, salt, and pepper on top.

WHITE SEAFOOD PIZZA
I realize these are recipes and I do not actually make my dough, so feel free to substitute your personal favorite dough recipe for this one.

- 1. Pick up your doughballs from local gourmet market or pizzaria (or make your own) let stand well floured under platic and covered with towel
- 2. preheat oven to 500 with pizza stone in place 425 if using a pan (baking times will be longer)
- 3. peel tails of of shrimp and chop into chunks as long as they are wide.
- 4. put 3/4 of the stick of butter in microwave safe bowl with minced garlic and shrimp and little bit of the spinach chopped fine (for color). cover and nuke for 2 mins.
- 5. flour counter top and roll out dough to fit stone and peel. sprinkle with cornmeal and sesame seeds and flip onto your pizza peel (or pan if not using a pizza stone)** suggestion use a mix of olive oil and butter on dough before sprinkling ingredients, if using a pan)
- 6. pour shrimp-butter mix onto center of dough and spread it out to 1" from edge. use brush for the edges
- 7. use remaining butter (melted), sprinkle garlic powder and sesame seeds along edges, spread out 1/2 of the chopped spinach and cover center with shredded cheese then space out cheeseballs and sliced pepper and remaining spinach (reserve 2 tbs for garnish)
- 8. step back and open oven, sprinkle corn meal onto stone and slide pizza onto stone using your peel.
- 9. bake 5-12 minutes, or until crust is golden brown and cheese is bubbly
- 10. garnish with spinach, slice up and enjoy!!
QUICK & EASY (& HEALTHY) MIXED SEAFOOD PIZZA
This a great recipe for those times when you want to eat something unique, but you don't want to spend a lot of time making it. This calls for common store-bought ingredients, but you can easily tweak the recipe. For example, sometimes I use 3 personal-size pizza crusts instead of one large pizza crust, and you can easily just use shrimp if you can't find the frozen seafood mix.
